Notice the snatch skinners, can't do it without 'em. Anyway Gabe I watch you and Rob's videos because it brings memories of what I recall as the better times. My whole family participated in the "catch, clean and cook" system of living. I am so glad that you do not have to try to describe the taste of a fried catfish or green tomato. I am a retired GA State Officer (21 yr tour) who was born and raised and worked for several building and utility contractors in South and Central FL. I am worn to a frazzle now from all that but I love to do the little outdoor I still can and I am really grateful to you...and Rob for bring us into your lives.

Gabe, don't forget to moisten the line before you cinch the knot. Without moisture, there is a lot of friction on the line, which weakens it.

I’m gonna give you my secrets on channel cats. I don’t know if if you know it but most fish hatcheries feed chicken parts to their fry. So they develop a love for chicken livers. Other fish like hybrid bass love them too for the same reason. I’ve even caught strippers on them.
Go by a restaurant and ask for 2 one gallon cans. First drill one can full of 1/4 inch holes and the other can cut the open end 2 inch cuts 2 inches apart all the way around the rim so you can slide it down inside the other can. You don’t want to have holes in one can so it won’t leak when it’s full of livers. I usually put a couple of self tapping screws in after putting in the livers to lock the cans together. The reason for the secure cans around here is snapping turtles. In Florida in addition it would be gators.
I make it and put about 6 tubs of livers in the can with no holes place the can with holes on top lock them together and put a short piece of wire to tie a rope to and put it upright in my freezer. When I’m ready to use it it’s ready and waiting. Plus it’s frozen so there’s no smell or mess from spilling out the end with holes.
I have good catfish holes that I fish and take the canned livers in late evening and tie the cans off in my spot. I fish some but usually come home a little after dark and I’m back at daylight the next day.
I fish with chicken livers on small circle hooks tied to a swivel with about 18 inches of 8 pound test mono. I have 14 pound test on my reels with a 1/4 ounce bullet worm weight above my swivel. The areas I fish have all kinds of structure. Maybe that’s why these the fish like it and this setup allows me to fish without getting hung and if I do I only break off the hook. You don’t need multiple hooks. As soon as you drop it down close to the can you have a fish. No casting and throwing off your liver just dropping it out close to the can. I’m ashamed to tell it but I’ve caught hundreds in just a few hours.
Most are pound at least for me to keep and I put them on ice immediately.Catfish cleaning is tricky and everyone that’s done much has their tricks. I’ll tell you the best trick is to ice them. Not only does it preserve them it keeps them alive. When they get cold it’s like they are parilized. Their fins are locked straight out and if you put them in warm water a day later they come back to life and start working their gills. Most of the time I clean them a day later and I have a board with holes that fit their side fin laying on their side I use a squeeze clamp on the end of their tail and I fillet them and flip the meat and use the knife to remove the skin just like any other fish.
I can clean between 60 and 90 fish in an hour this way. No skin no bones.
I put them in ice water as I’m cleaning and leave them for at least 2 hours. Then I rinse them drain all the water I can and then I wrap them in large cotton kitchen towels rolling them up in them and put them in the fridge for 2 hours. This dries them out and gets them ready to absorb my buttermilk and eggs and spice soak and the dipped in my flour and Italian bread crumbs dry mix. I deep fry in canola oil and it’s about 1 minute a basket. These small channel cats equal any fried fish you’ve ever put in your mouth.

Our favorite way to catch cats is with pool noodles. We bait them with bream. Let them soak while we fish for something else. Kids enjoy the pool noodle fishing too. Nothing like pulling in a big flathead up here in North Alabama.

Grew up fishing for catfish in Texas with my dad. He always said any fish with scales is bait for catfish because he loved to eat catfish. I clean them using a big fish hook screwed into a tree and cut the barb off the hook. Skin, gut, and cut the head off. My favorite way to catch catfish is make a jug line using a foot long piece of swimming noodle float, an 18" piece of PVC pipe capped on both ends having a short piece of rebar inside, attach a heavy line with a weight and hook and set it laying down on the water. When the fish hooks itself, the noodle float stands up and stays up because the rebar slides to that end. Reflective tape helps for night time fishing to see when they are standing up.

We always just called em fingerling cats. Used to be a little place here in Melbourne Fl back in the mid 70's ( and earlier ) called the Buck Horn Lounge & Restaurant on US-1. They had the best fried catfish & hush puppies around these parts, and charged only a tad more for the fingerlings. ( They also had oysters, BBQ, and all-around country cooking, but were most popular for their catfish. ) My dad used to take family & friends visiting from out of state to eat there. They all swore those fingerling cats were the best they ever ate anywhere. The Buck Horn has been long gone for decades now. Those were the days. Also back when Grant Florida was the shellfish capital of the world. We used to harvest our own oysters from around there. Much bigger & tastier than the oysters from Apalachicola ever were. Back then, our oysters were so big, the old timers called em "cow tongues". We ate em raw, but mostly roasted em in their shells right on the hot coals. MAN, THEY WERE SO TASTY.
