      I like it too, I sometimes just do a devil's food Bundt cake and sprinkle powdered sugar over it, it's really good and not overly sweet

    I remember my Mom doing this frosting and its so good! in the late 60's there was a thing to do this, but you frosted the sides, and then drizzeled chocolate sirup on the edges, it was so good.
    You make me want to do this frosting again 45 years later! LOL

      I have some cookbooks that have that but it's just melted unsweetened chocolate🍫. supposedly the chocolate absorbed some sweetnessbfrom the fosting.

    I overdosed on fluffy white frosting in 2nd grade and haven't been able to eat it since. That's been quite a while now. 😖 But I love, love, love devil's food cake!😛

    Yay! My favourite meringue method for buttercream. I use the amounts from my Martha Stewart Baking Handbook all the time. So much simpler than Italian or French and very consistent results. Great recipe, Sarah!

    I like that idea of dusting the bottom of the pans with cocoa powder. Pretty smart, better then flour. I will try that.

    I prefer a white cake Sarah but I will eat chocolate if it looks delicious. Your cake looked delicious - I would eat it. By the way how tempting was it to lick the frosting from your mixer when you lifted it?
    I would have licked that all up. I could eat that frosting for days!

    Love it! What Dutch processed Cocoa powder do you recommend? My local grocery store used to sell Droste but they no longer do :( I'm trying to find a good replacement for it.

    As a baker i dont consider that as a frosting it is just swiss meringue maybe if you put butter then it is frosting.

    you might need to add more sugar or add chocolate chips. i followed the recipe and it had great texture but not enough flavor.

      Baking powder is basically baking soda with the acid already built in.

      Both are leaveners. One is activated my moisture (POWDER) the other by an acid (SODA) which it already contains. The reason Red Velvet cake was originally red was because Baking Soda had no acid in it, and required a tablespoon of vinegar in the cake to activate. The way they used to process cocoa meant that it also turned a flushed red when combined with acid. They used this reaction to make red cakes. ~History Science Go~

    The recipe says 3 3/4 cups of sugar but in the video you said 2 1/4 cups which is it?

      Hi - That’s the total amount of sugar - ‘divided’ - you use some for the cake and reserve the rest for the icing. Good luck!
