Recipe:

Step 1: Make the Dough
Ingredients
* 1c. and 1 Tbsp 00 Flour
* 1c. and 1 Tbsp AP Flour
* less than 1c. Warm Water
* 1 tsp Salt
* ¾ tsp Active Dry Yeast
* 1 tsp EVO
* Extra AP flour for shaping
* Veg oil or pam
1) Combine water and yeast, then flours, salt and evo and stir on low until combined. Let rest 15 minutes
2) Knead for 3 minutes
3) Proof for 3 hours under plastic wrap and oiled bowl.
4) Shape to desired size, adding flour as necessary

* Pastry Card
* Bowl
* Plastic wrap
Step 2: Make the Kebab Meat
Ingredients
* 1 lb ground pork
* 1 tablespoon paprika
* 1 tablespoon dried oregano
* 1 teaspoon dried basil
* 1 teaspoon thyme
* 1 teaspoon black pepper
* 1 teaspoon cumin
* 2 teaspoons salt
* 1 cup yogurt
1) Mix together the meat with the yogurt and spices.
2) Place in a pan and bake at 400 degrees for 90 minutes.
3) Slice the meat thin and crisp in a pan

* Pan
* Foil
* Knife
* Cutting board
* Saute pan
Step 3: Make the Pizza Sauce
Ingredients
* Tomato Paste
* Canned Tomato Sauce
* Garlic Powder
* Onion Powder
* Oregano
* Black Pepper
* Salt
* Sugar
1) Combine everything and let simmer for 1 hr - add water as necessary
Equipment
* Med pot
* Wooden Spoon
Step 4: Make the Kebab Sauce
Ingredients
* ½ c. Mayo
* ½ c. Sour Cream
* 3 tbsp Plain Yogurt
* 2 tbsp Sambal Oelek
* 2 tbsp Pineapple Juice
* 1 tbsp Pepperoncini minced
* 1 tbsp Garlic minced
* 1 tbsp Cucumber minced
* 2 tsp Oregano
* ½ tsp MSG
* AN Salt
1) Combine and adjust as needed
Equipment
* Bowl
* Whisk
* Squeeze Bottle
Step 5: Assemble & Bake
Ingredients
* Pizza Sauce
* Shredded Mozzarella Cheese
* Kebab Sauce
* Shaped Dough
1) Vent dough with fork
2) Lay small amount of sauce and cheese
3) Kebab meat next
4) Bake at 400F until done
5) Squeeze bottle kebab sauce in concentric circles

You can see the look in his face when he simultaneously realizes what he is about to say and the fact he can't stop his lips from moving. The way he just turns right after was perfect, didn't even try to salvage that moment because he knew it was done.

As someone from Jönköping, I am happy to see this finally getting some international recognition as it's own type of pizza! Far from the classics, super regional with the secret sauce. Hard to copy, so A for effort! Way to go Josh and the crew 👍🏼

as a chinese who had lived in Jonkoping for a few years, i have to say that i really missed the kebab Pizza! yummy!!
The first Pizzeria was opened in 1947 in Sjöhagen Västerås but in the same year it opened one in Östergök Stockholm and got more noteriaty then the one in Västerås. Technically the one in Västerås where opened a month earlier then the one in Stockholm so thats a thing I guess.
As a Swede this episode makes me very happy to see.
FYI Kebab pizza exists all over Sweden! Often kebab pizza also has some cold veggies on top (like raw onion, tomato and lettuce) as well. And yes, we do put banana (and curry and seafood) on our pizzas 😩 almost every town will serve it… alongside 30+ other pizza flavors

If you travel to the top of Sweden and visit Kiruna, you can get a reindeer kebab pizza. I don't know if you can get it in other places, but the one I had were amazing.
I've seen it and ate it but I think the restaurant, Palladium, has closed or something similar. Haven't been there in a while though.
you can get it at some other spots in northern Sweden and around fjallen. Very good stuff
You can probably get it anywhere in Norrbotten at least, which is where Kiruna is. So you don't have to travel all the way to the top of Sweden. I live in southern Norrbotten and I have at least two pizzerias within crawling distance that serve it.

That pizza does look incredibly tasty but if I or any of my friends would have been served that pizza here in Sweden we would have given the pizzeria an extremely negative review. Way to little meat for a proper kebab pizza, ideally the meat should cover the base. Loved the touch of serving it with the peppers at garnish on top, it isn't a proper kebab pizza without them.

we dont use sausage kebab meat, its lamb.
This food crime is not actually (for once) Josh’s but in fact 100% authentically a Swedish one.
Also in Jönköping they do use Fanta in the kebab sauce^^

When talking about Swedish pizzas you have to remember that the pizza itself is more of a delivery method of delicious toppings. It's like a sandwich which you put delicious stuff on top.

Seems very related to a “stuffed” lahmaçun. Especially loved that in Germany.
The Turkish pizza is just a flatbread with some ground meat (and tomato, peppers, onions). And then the “kiosk” where you ate, added all typical doner sandwich condiments (doner meat, onions, cabbage, tomatoes, yoghurt sauce, garlic sauce, spicy sauce etc.). Delicious!

As a person who grew up in Stockholm, the thought of not using white sauce (yohgurt based garlic sauce) on kebabpizza is upsetting.
It is very nice to see recognition of the fact that swedish pizza culture is very much a turkish affair. If a pizzaplace in sweden is italian, it's usually somewhat fancier.
I'm Swedish and when I was a kid growing up, my mother would make a dish very similar to this. She would make a "meat loaf" of lamb, beef, pork, she would shave it into small bites and put it on a homemade pizza crust plus she made the sauce...it was wonderful!!! I bet Josh's pizza was delicious!!
Pennsylvania is on the east coast (Northeast). Can confirm, from Philadelphia. If Pittsburgh wants to be midwestern though then Ohio can have them. We're okay with it.
No, in Europe Kebab (sometimes called Döner) refers to meat that is cooked vertically on a spit all day and normally is served as a sandwich with fries, though occasionally you'll find it in rice. Kebab meat in Arabic also refers to meat roasted on a spit all day, but specifically to lamb/beef and a certain combination of spices. Shawarma is similar, but a different seasoning is added and it is often made with chicken.

I love seeing swedish pizza getting recognition as its own variant. A large part of it is experimenting with different toppings. While the rest of the world argues over pineapple on pizza, we throw it on there with shrimp, curry powder and banana!
Exactly, there aren't a lot of ingredients we haven't tried putting on a pizza. :D
My favourite is probably chicken + curry + peanut + banana
In Brazil is the same, we put EVERYTHING on pizza, Strogonoff pizza, Picanha Pizza, and fhey are HUGE! Our pizzas have a lot of fillings and huge stuffed crusts

As mentioned at 14:40 there does exist a variation on this pizza. It has no official name due to it either being named "The special" or after the resaurant it is served at, but it is a kebabpizza with added french fries and iceberg lettuce. The crunch that both the lettuce and the fries add is divine.
Regular is Super and if you add fries and sallad its a Superdunder, simple and easy.

I'd say there's no true answer to what a "Swedish Kebab Pizza" is.
There are iterations to kebab pizza all over Sweden, so depending on where you are in the country it might taste quite different. But that's part of the beauty of a kebab pizza!

I live in Sweden and there are a lot of good places with good kebabpizzas but they are different in different areas of the country :) Especially the sauces on top.

the pizzeria Tommy's used to have my favourite kebab sauce, their medium sauce was others hot sauce. sadily they changed the recipe so it isn't as hot any longer.

There is a dutch version of this called Turkish pizza, where you fill the pizza with döner kebab, lettuce, tomatoes, onions, garlic sauce and sambal, and then roll it. Best after party snack ever!
”Why aren’t there fries on this”… you can get kebab pizza with fries (I do, sometimes) but it’s usually not printed on the menu.
There are places in Sweden where you can get a kebab pizza with fries on it. It's amazing. Best hangover food ever

Yeah, we ALWAYS have the shaved kebab. And yes, it's almost always pork. So it's basically stacked sliced of pig. Super yummy!

I live in Jönköping Sweden and we are at constant war with the rest of Sweden about our Kebabpizza. It's the best tho and if you ever get the chance, have some kebabpizza in Jönköping. It will probably be your best meal on the trip!

Apparently if it is to be a true Swedish kebab sauce it should include Fanta in the recipe. It is also really important that the sauce is stored in an old school Stadium (a sporting goods store) water bottle!
Only if it's from the Småland region. Rest of the Sweden doesn't use the same sauce.

Dont cut off the crust, the idea is when you stretch the pizza out, you force the air to the crust so it expanded and makes a airy crust

Kebab pizza is widely available in Finland as well, but only in Oulu area you'll find mayonnaise on pizza. I've heard some people say it's because a local company makes the sauce and it's not available anywhere else.

As a swedish fan i have mixed feelings about this episode. Josh, apologise for the snus, its godgiven gift to humans! (Think of it drenched in surströmmings juice, absolute horror, used it, quit, taste like garbage.)

Also if you want to make things more swedish for GMM, add dill, kaviar (swedish household version aka Kalles kaviar) and salt licorice (djungelvrål), i guarantee they would love kaviar bagles (just hefty amount of kaviar) or licorice doughnuts.👨🍳😘

The kebab we eat in Sweden Is traditionally cooked on one of those rotation grills, whether it’s served with rice, French fries, rolled in bread or on a pizza. If we use pork, it’s generally gyros, from the Greek recipe. I live in Norrköping where both gyros and kebab is hella popular on pizza. In other words, here kebabs is always 100% beef or lamb(very rarely cuz hella expensive) and gyros is pork. Norrköping also has the best mild sauce in the country which is a staple on any pizza or kebab, anyone who says different is from Finspång.
Kebab everywhere is roasted on a Rotisserie.

In the south kebab is either beef or pork. The pork version is of course in reality gyros, but the term is rarely if ever used unless you go to a greek place. We just call it kebab regardless.

I studied abroad in Jönköping almost 20 years ago, and there was a pizza place I went to ALL the time called Evergreen. No idea if it's still around, but they DID have a pizza with fries on it called the Tre Kronor. I ate lots of those. Man, I miss this pizza.

Seems every scandic country has their own variation of this!
In Finland especially up north the dough is more thicker like in Turkish pizza, heavier on cheese, and the mayo is also thicker, saltier, and has variations like garlic, chili or sweeter mayo.
as a swede i give you a barely passing grade on the pizza, but i'm from a bit further north so we put more stuff on (sometimes fries!), and garlic sauce, and swedish pizza ettiquette is non existant, fold it, roll it, eat it with cutlery, some maniacs put the pizzasallad on the pizza even.

We’ve had doner kebab pizzas where I live (Telford, England) for years in ‘Kebab Ye’ & ‘Pizza Zio’. Our ‘Papa Johns’, ‘Dominos’ & ‘Pizza Hut’ are sadly lacking in it. Cheeseburger pizza seems to be a thing too. Had absolutely no idea kebab pizzas were Swedish! 🤯
In my hometown of Skellefteå, there's a pizza place where you can get a full hamburger meal(with fries and all) inside a calzone. It's actually pretty good😂
