Ingredients
------------------------------------------------
3kg beef cut Arabic style
Cinnamon sticks 2nos
Pepper corns 1/2 tsp
Bay leaves 3nos
Cardamom 8nos
Cloves 10nos
Salt 4 tsp
Turmeric powder 1/2 tsp
Arabic masala 1 tsp
For Gravy
--------------------------------------
Ghee 1/2 cup around 125ml
Fennel seeds 1 tsp
Onion sliced 4 medium
Ginger and garlic paste 2 tbsp
Tomato chopped 3 medium
Tomato paste 2 tbsp
Arabic masala 4 tsp
Kashmiri chilli 1.5 tsp
Biryani masala 2 tsp
Turmeric powder 1 tsp
Cumin powder 1 tsp
Salt to taste
Hot water 2 cups
Chopped coriander leaves
Chopped mint leaves
Lemon juice 1 tsp
For Rice Boiling
--------------------------
Basmati rice 4.5 cups (soaked before 30 mins)
Black cardamom 3nos
Green cardamom 8nos
Fennel seeds 1 tsp
Cinnamon sticks 2nos
Bay leaves 3nos
Star anise 2nos
Cloves 8nos
Salt 5 tsp
Chopped coriander leaves
Chopped mint leaves
Lemon juice 1 tsp
Cooking oil 1 tbsp
For Rice Layer

Fried onions
Chopped coriander leaves
Chopped mint leaves
Saffron (soaked) with rose water
