Bacon Brown Sugar Ribs Smoked On The Weber Kettle

  • Pork on pork. I had to find out if it would work, so that meant one thing--I'd be putting my Bacon Brown Sugar Rub on a rack of St. Louis cut spareribs and smoking them on the Weber Kettle using some peach wood. A quick glaze with some BBQ sauce finished them off and the end result was nothing short of pork heaven.

    As someone just getting familiar with the hobby, today I cooked my first rack of pork ribs using your method and it was a huge success. Living in Hungary but visiting the US on business occasionally, I was glad I had the chance to introduce the authentic taste of low and slow BBQ to my family and friends here at home and now they are hooked. The detailed instructions, especially on setting up the kettle helped me tremendously. Thank you Ry!

    My wife loves fall off the bone ribs, so therefore I cook them that way lol. They do melt in your mouth. Bacon and brown sugar is an awesome idea!

    Just cooked these up today. And WOW! were they amazing. First time i smoked ribs. Just like yours - fall of the bone. Will need better anticipate when to remove ribs out of foil. Overall fantastic ribs really happy with how they turned out. Cheers, Michael from Merida, Yucatan, Mexico.

    I saved bacon fat and applied to ribs before the rub, and it was amazing! (highly recommended) Gonna try this method though too. Maybe combine the 2. Who knows...Thanks for another awesome video!

    Love the ribs. I've never used bacon in a rub before but I have wrapped a peameal bacon roast and a pork tenderloin in bacon. You cant beat pork on pork.

    I found your site when shopping for info on the Slow n Sear and stayed for the cooking. Would not have thought bacon on ribs but why not, bacon makes everything better... except maybe my cholesterol. This is a must try.. might add a shake or two of cayenne since I've done candied bacon with brown sugar and cayenne and that's awesome.

      That may be very true so you be careful out there because I'm pretty sure there's nine other states are not going to be allowed in lol now to be serious them ribs looked absolutely fantastic and you can bet I'm using that rub I'm pretty sure I'll be kicked out of the state of Indiana for it but but if I got to be kicked out of Indiana this is the way to do it

    Those look amazing, next time just leave em in the foil after you open em and just create a lil boat. That's will also give you something to lift em out the pit with vs using ur spatulas. Just a lil tip, love ur content sir

    When you can pull the bones out like that I just like to cut off a chunk (with the bones removed) and eat it on a bun.

    Also, instead of basting with a sweet bbq sauce, try it just with a simple salt and pepper dry rub and dipping it in some Japanese ponzu sauce.

      Just depends on how I'm feeling and if I want to add a splash more flavor. I'll often just use water.

      I would have cut back on the 2 and done a 3-1-1 or that last part maybe a 1/2 depending on tenderness.

    Another great video Ry. Question, have you done a video on removing the membrane? I always do, years back, it was a struggle now it's simple (for me anyway) Just thought some new subs may not even know there is a membrane & why you should remove it & how. Just a suggestion.     So I smoked ribs on my highland today. Added brown sugar at the wrap. When I unwrapped them the bottoms of the ribs were black, the sugar had gotten burnt. Maintained temps around 220F. Any suggestions on how to prevent this in the future?

      Do yu have any sort of baffle plates in the cook chamber? They help distribute the heat more evenly. Also, was there liquid in the wrap with the sugar? I've never had any issues with burning.

      I've done 3, actually: ruclips.net/video/VgKbmSlAxQE/видео.html This is using a rib rack, but you could do two without it easily, especially if you are using something like a small briquette basket to contain the coals and maintain a large enough surface for indirect cooking.
