Ms. Carolyn you are always on time! I have started a clean/lighter way of eating and use quinoa a few times per week. Thanks for giving me another great recipe for my toolbelt!
Going to try this very soon. Loved that you used different color bell peppers. Will work great with the family members that don't like green but will eat red or yellow. Thank you for sharing.
OMG ! I was looking for a good quinoa stuffed bell pepper recipe. I saw several, but yours is among the best with the eggplant & mushroom addition. Wonderful ! Can't wait to prepare !! 🤠
Thanks for the recipe instead of bell peppers I used Portabella mushrooms for a dinner party it came out wonderful everyone loved them & wanted more... next time I'll make 2 batches 😉
Excellent dish!! I always hear of Quinoa as a sub for brown rice. And, I would have never thought of adding Eggplant to Stuff Peppers. Will have to try just as u made it! Thanks!!
I like to wash the quinoa before using it. Even if the package says it's been pre-washed. It removes the bitterness. I like this recipe and I can't wait to try it.
This looks good. Since I'm a vegetarian, I'm going to use a meatless sausage instead and cashew cream as a topping instead of the cheese! Thanks for the idea...keep them coming!
Hi Carolyn I'm new to your channel and I love your style of cooking. Especially not using a lot of ingredients. I was wondering if I can use brown rice because I have never tried the quinoa.
Just made this for my fiance, it was great! We veganized it with ground tofurky and omitted the cheese. It was amazing! Can you try some vegan recipes on your channel? I love your channel and I will keep watching for recipes to veganize. Thank you!!
Carolyn, Happy New Year! What exactly is quinoa? I'm having a hard time with NEW stuff or stuff I didn't grow up with! Can you help a 54 year old out!? Thanks in advance.
Quinoa is a high protein seed, if you will. We treat it like a grain but I've learned it's not. I love it. I like using it as a main course or in place of rice. Check out his link and read up on it www.huffingtonpost.com/2015/06/19/what-is-quinoa_n_7612836.html Be sure and check out the video I released today Acorn Squash Soup. ruclips.net/video/XSisgne5jcw/видео.html

So trying this
This is fantastic as im lookimg to lose some lbs
You should look into other oils for cooking. Olive Oil is damaged by heat :/
Daniel Ray Yeah I've heard that. I remember when Veggie Oil was at the top of the heap. Times, tastes, and trends change like waves. To each his own.
oh sorry not feeling heal better now BLESS day
