Hello, im greek and i can assure you not all fresh olives are bitter. In fact my favourites aren't bitter at all. If you like travelling and you have the financial ability to do so, I suggest you visit Greece, and specifically the Peloponnese region. We grow most of our olives there, and i assure you; you will taste the best virgin olive oil and the freshest olives. You cannot compare the US olives to the authentic greek ones. Pay a visit!

What variety of a fresh olive (not pickled or fermented) are sour? I would love to know. Cause I know that fresh olives are all bitter and the sourness and other flavors come out usually after it’s pickled or fermented, like the Alfonso olives which taste a bit sour after pickling. Please educate me 😌
