I know by heart how to make gumbo but I watched your entire video because of how wholesome your set up is and how much love you clearly put into this. This kind of video is my absolute favorite type of cooking video.. you aren't just cooking because you and your family are hungry, or just to put out cooking videos on RUclips, you are doing it because these tried and true recipes run through the blood in your veins. You put SO much love and passion into it and you can feel your wonderful memories exude
Rachel Aaroen Pris is only the 2nd person I’ve heard say this. The other was my mom whenever we would be driving or shopping or walking to the bus stop, ect. LOL. But ESPECIALLY when she was cooking. Many a time she smacked my butt with a wooden spoon in the process.

In Louisiana we call the garlic “the pope”. So we use the Holy trinity and the pope to bless our delicious food…I’m just at the beginning but so far, soooo goood!
Just like I make it except I’m not an okra fan so I leave it out. Most people in La think tomatoes in gumbo is ludicrous…lol! I’m going to look at getting one of those separators, I’ve always tried to skim off the excess and that looks so much easier. With that gumbo, you win the honorary Cajun pin👏👏👏👏
I agree if you are going to make Gumbo, to use Chicken Thighs, more flavor. I love your large pots. I am a large pot gal also. lol.... I looked at many recipes as I am making My Seafood Gumbo this weekend, (Large Pot....lol.).....Its also nice to see you separate the grease from the good stuff. All the recipe I looked at, they keep the grease in. Personally, I only used like a 1/4 cup oil, I don't like grease. Out of all the recipe I have watched online, I think yours is the best. You are a good cook. I know this, I been in food service for over 35 years and would put myself in the Chefs Category. I really enjoyed your video. I love your online name too. i absolutely adore gumbo, not many people make it here in Virginia lol but i love it i add chicken, smoked sausage and shrimp to mine served over rice, mmmm think i might half to make a pot very soon

I a from cajun country so I known a gumbo.... The sounds and smell of my maw-maw cooking this I miss even the pot brings it all back.. And yes it is always better as left overs.... Might just cook me one this weekend it might b cold.

I'm from Louisiana, but actually Gumbo is a collection of many ingredients. I use a min of 4 different sausages, use all parts of a chicken. gizzards, liver, heart. To cut down on the grease, you may want to fry all the sausage in separate pan and then strain it before adding to gumbo. Different parts of Louisiana serve it with potato salad, here in Avoyelles Parish we do baked sweet potatoes with our gumbo.

Yum (I'm drooling)..good video! I have never won an award for gumbo, but I did win one for my elk chili. I love gumbo. I do have to admit that I cheat when it comes to the roux...yep, I bake the flour and turn it often. When it gets to the color of peanut butter (about an hour), I add the oil and mix to the consistency of thick mud for a dark roux. I'm glad to see that you use chicken broth instead of chicken stock. I do the same. Love your philosophy on the spices...more is not better. I also do the Tony Chachere (original), Worchester sauce, and Tabasco (green). My favorite mix of meat is chicken, andouille, and shrimp (or mudbugs). I will have to give your mix of kiełbasa into the gumbo a try...sounds great! As for the okara, love it in my gumbo and grow it in my garden (like it fried too). Love the separator idea...will definitely try that (I know my wife will like it). Do you use, or make available when serving, filé powder? Thanks for the video and ideas...glad you shared them!!!

That is a beautiful roux!! My girls always used to pick at me because I was so involved in stirring!! Now both of them do exactly that! Have never added L and P. will try it! I have made roux with butter. i prefer with oil. I don't like gumbo with tomatoes. Now I must get the groceries for potato salad!! great gumbo right there!!

Breeshey W family of 8 here. Big pots like this were the norm. I learned to make a Roux in preparation of gravy at 5 yrs old. I was cooking and canning at 3-4 yrs old. Sitting at the table with mom and my 4 sisters for days on end, preparing fruits & veggies for a week long marathon of canning. Her recipes remind me so much of my mother’s cooking. Which was delish, lol.

I LOVE LOVE LOVE your apron! I bet I could keto-ize this recipe! The roux is the only part I need to adjust. I often use xanthum gum (a tiny bit goes a crazy long way) to make a roux-like texture. And sometimes I just make a broth version of some thicker recipes and just enjoy it thinner. still translates the flavor and essence of a dish! Love this recipe! And btw, you answered your question right after you said you didn't know why and that you arent a scientist - the sausage floats because it has a high fat (oils) content causing it to float just like oil slicks on top of a pool of liquid! Chicken is dense with low fat so it sinks! There ya go!

It's sad to me that anyone would leave okra out of gumbo, not only because it's classic and delicious in this dish, but the very word "gumbo" is an African language word FOR "okra." Gumbo MEANS okra.
I've looked into this okra issue pretty extensively. It's a fact that it's pretty much a 50-50 split when talking to real Louisiana folks. The one thing is you can absolutely have an authentic gumbo that does not include okra. I don't include it in mine. But I live in Montana. What do I know!!!
I'm making gumbo for my first time today after watching this video. My friend who lives in Louisiana even sent me Andouille sausage for it. But we live in Colorado and could not find Okra anywhere. We went to several stores and none of them had it. My friend said that it should still be fine without it. So we'll see.

@@catchtwenty22 Butter burns more quickly if your trying to do a roux over high heat, Oil is at least a BIT more forgiving.

It's sad to me that anyone would leave okra out of gumbo, not only because it's classic and delicious in this dish, but the very word "gumbo" is an African language word FOR "okra." Gumbo MEANS okra.
Well I for one hate okra and classic or not can't put it in there.
I've looked into this okra issue pretty extensively. It's a fact that it's pretty much a 50-50 split when talking to real Louisiana folks. The one thing is you can absolutely have an authentic gumbo that does not include okra. I don't include it in mine. But I live in Montana. What do I know!!!

I'm making gumbo for my first time today after watching this video. My friend who lives in Louisiana even sent me Andouille sausage for it. But we live in Colorado and could not find Okra anywhere. We went to several stores and none of them had it. My friend said that it should still be fine without it. So we'll see.

This video was equal to a professional cook video. I know you always say you are not a professional but you are doing so well. I have never had gumbo, being from Canada, it is not one of the foods that I am familiar with. I am familiar making roux Hungarian style for my cooking, so I think I will definitely try this recipe, it looks amazing. Thank you again.
