Roasted Butternut Squash Recipe

    In this video, April prepares a simple side dish that is perfect for the winter months. It is simple but the pop of color on the top looks beautiful. This would be delicious paired with a slow cooked roast!
    Serves 4
    Ingredients:
    6 cups Butternut Squash, peeled and cubed
    1/2 Onion, roughly chopped
    1 1/2 Tbls Fresh Sage (1tsp Dried)
    1 Tbls Pure Maple Syrup (could sub Honey)
    2 Tbls Extra Virgin Olive Oil
    3/4 tsp Salt
    1/2 tsp Pepper
    Directions:
    Preheat oven to 425 degrees
    Toss all ingredients together on a large sheet pan in an even layer
    Roasted for 12 minutes, toss and bake another 12-15 minutes, or until squash is lightly browned on the edges

    Looks fantastic. I bought a butternut squash the other day.. never cooked one before. I was looking for a recipe when I found yours.

    Will try. We grow a couple of dozen butternuts every year. One suggestion: DON'T throw away the seeds. Save a few for next year's crop. Let them dry out for 2-3 days and then put in an airtight container (plastic bag or pill bottle). For the rest: sprinkle olive or canola oil, lightly salt & pepper (I also load them with garlic powder) roast them in a toaster oven between 375-400. Turn them after about 9 minutes. When you hear them start to popping and they are turning medium brown, they're done. Make a great munchy.

    I tried this last week. It was super easy, because my market sells the squash peeled and cubed, so the hardest part was peeling the onion! I'm making it again tomorrow for some friends.

    I don't think I've ever even tasted butternut squash much less know how to cook it. Looks like I need one of those peelers too. Definitely have to try this recipe. Thanks for sharing.

      Wrong wrong!! You definitely need to peal it so that it roasts all around otherwise it just steams in the skin and you miss that golden crispy texture. I also add a touch of cinnamon and nutmeg. Not a lot, mostly for aroma.

      DO NOT PEEL THEM-- you put them the toaster oven and they are PERFECT!! the skin falls off and you get the carmel flavor on the potato throughout and under skin!

    Definitely great taste in knives -- I have a Shun exactly like it! I saw a video on RUclips, though, that says you shouldn't use a Shun for something like this, since the blade is at a 16° angle, very thin. Better a cleaver or other heavy-duty knife. They aren't cheap, so I thought I'd pass this along. Any tips for sharpening, or have you not had to do it yet?

      You can send the knife to Shun for sharpening. It's like $5 or something. Also, where I live Williams Sonoma has free sharpening.

    I am copying what she is doing but there's a twist in this black pepper chilli flakes sea salt and date syrup I'm trying that out to see what's the perfect combination never done this in my life I'm hoping he will succeed a good one

    If you poke holes in the squash and microwave it for 5+ min. it will be easier to peel and chop.

    You should not use Olive Oil. It has a very low smoke point and is carcinogenic when heated at high temps. Use cocnut oil or Ghee instead. NAmaste =)

      I'm not sure where you heard that olive oil is carcinogenic but I
      could not find any documentation supporting that . High temperature or not

      Himalayan Salt is Pink-- It is from the earth and contains essential minerals. I would recommend anyone who is sensitive to this to use it.

      Lori B Roasting does not happen from Olive Oil- Roasting is caused from the heat- Yams and Sweet potatoes are great from the oven- or use a small toaster oven! If you have one! You can add Olive Oil but you are adding calories, not flavor! Oven Roasting and adding Spice and Salt before and /or after is your answer here.
