Damn... It's quite obvious this guy has done this once or twice. Fast, efficent, clean. Keeps his knives sharp. That trailer is really set up nice. The transition of the quarters to the inside is smooth as hell. He did in 20 minutes, by himself, what it takes two of us an hour to do! I remember my dad cutting the feet and splitting the carcass with a hand saw. We now use the same thing he used for that. It appeared that he kept the tounge, but not the liver or the heart. We keep both. Love liver and onions, and I dice the heart and roll it in flour that is seasoned with salt, pepper, garlic powder and onion powder, then brown it and then put it in the oven and bake it low and slow in a brown gravy. Very excellent over egg noodles or mashed potatoes. Thanks for the video!

Very impressive! We butchered our first cow of that size a few weeks ago on our homestead, and let’s just say it took a hell of a lot longer! We didn’t use a sawzall, and the tractor could only lift 750lb. What was on the towel that you wiped the hind legs with?
I can see skill when I see it and seeing he wasn't talking and totally IN THE ZONE and seeing him use the knife I knew right away he was taught the old school way and he is a master at what he does. Very impressive he only got shallow on a few spots of the hide moving at that pace. Very impressive

Deer and elk often are put down in incredibly difficult terrain and foliage and not a pasture paddock next to a butchers trailer setup. Way different circumstances but this man and his skill still deserve total respect.

Back in the days my dad never skinned the animals we would boil water and scrap the hairs off.. the intestines was used for tripe soup, mom made bull foot soup, with the feets, and cows head and tongue was made into a souse, those parts eveyone wanted..no parts of the cow was wasted.
You are a beast for doing this in 20 mins. In Hellas we also eat most of the inside but I guess you throw it for dog food. Also impressed of the mechanisms you have on the top of your truck. I have not seen something like this being sold, so probably put it up all together. I think I always see second vehicle doing the lifting, that's why I am impressed. Well done 👏👍
This is amazing. Also, if I showed this to my wife and daughter I suspect they would become vegetarians. 😆 One thing I would do different would be I would have to wear long pants, maybe even something with some extra layer so I didn't accidentally slice my leg! This guy is really good!

This is pretty good work. I spent 22 years working in a slaughterhouse in Alberta Canada it was hard heavy work and we had to be fast we ran 300 head per hour.
