- Not really a complete how to video on butchering but more just turned on the camera while stripping the meat off some caribou quarters in my house and talking about the subject and some marten skinning I've been doing lately. A little look into life for some in a village in interior Alaska.

Stan, you are way beyond the scope of us ordinary earth people. Great video Stan. Very real and down-to-earth take on life, hunting, and caring for wild game.
As a hunter myself, most people who do not hunt do not realize the amount of work and care needs to go into a big game animal in order to obtain the highest quality meat, as well as to get the highest yield out of an animal. For myself, the hunt is the easiest part of the process. When the animal is down, that is when the work starts. especially as I butcher, package, make my own mince and sausages myself. I got into doing my own butchering and processing the animal myself as the prices for butchering has really sored and at times, it did not seemed that I was yielding as much meat out of an animal than was expected. In addition, with making my own sausages, I know exactly know what is in the sausages.

Thank for the tour of your place Stan, very nice!! it makes it easier to understand when you can see it and I guess the wrap keeps the smell away so you do not get animals coming after your meat supply in the wood shed.
Meat is kept there only till it's all taken off bones. Then all the big packages will be all thawed and wrapped into individual pieces of steaks and hamburger and stored in the unplugged in freezers in this old house.

My son & I just ran across Yukon Men a few weeks ago. We're still enjoying watching, got a few seasons to go. I grew up on a dairy farm in the 50, 60 & 70s, in a large family. I can appreciate the work it takes to keeps things going, the animals have to be taken care of no matter what. (At least you don't have to milk them) I live in town now (bummer) doing construction for the last 45 years or so but still hunt & do our own butchering. Didn't realize meat could be refrozen. That commercial wrap is a great idea. I'm wondering what kind of grinder you use that a tendon could break it... Thanks, Carry on.
refrozen meat is possible many times it just gets less quality each time but it still is fine health wise in my opinion. Best is to freeze it only once for taste purposes.
Got a #32 hand grinder that I put a 20" wash machine pulley on and electric motor and it makes a 5 gallon bucket of burger in no time at all. hardly ever break a cutter as the belt usually slips. Had it or something like that for 40 years. Used a wringer wash machine 2hp gas motor when I lived in the woods for 11 years.
I pretty much do them the same way all the way over here in lil ol NZ

Merry Christmas Stan and Family!!! Do you trap linx up there as well when you trapping Martin? Looks like some good eating there!! And after you skin a animal its called fleshing the hide!!
Lynx definitely trapped. Much of my line is in the higher country or open flats so not many lynx but some of the people trapping the sloughs and lake country have lots.
I boil all my canada goose meat, grind it add spices, onion, chilli, tomatoes etc and fry to make goose burgers.

A number of people don't like caribou. I hate gamey meat with rut on it but otherwise Caribou and moose is healthy and good in my book
I always thought that caribou were bigger then white tail in general

That is what I got the caribou with. It's overkill for caribou except for those long range shots which is how we got the caribou. Actually made the 8 shot extended magazine on the rifle right after I was bear attacked by a grizzly bear while carrying it and it worked for over 40 years but last two times I used it including, the caribou hunt it failed to push the next bullet up properly as the 40 year old mag. spring is now weak. I got it in the house to take apart and buy a new spring.

I know how to make Martin & rabbit sets but, not wolverine or wolf sets. I sure wish you would find time to teach me. Also how do you decide where to make your wolverine sets?
Wolverine actually go for baits just like a marten just need bigger traps. Some will get very smart if caught but get out of a trap, but the regular ones will actually step on an uncovered trap like a marten. Wolves are much smarter.
Stan, can't you use some of the tendons not useable for the grinder as trap bait.
Sure could but got lots of trap bait and things like the guts smell way more. The tendons from a quarter are not even a hand full.
I'm new to your channel and was wondering can you eat martin? What does it taste like?
You can eat it but it's very strong tasting. Even the dogs have to be hungry to eat it or I mix/boil it with fish.
Does Tananarive have stores? ...I hear town mentioned sometimes
We have one small general store. Prices are high so people like me rarely use it. I can go months without buying anything . Much better to order online or through phone.
i had a burger for lunch ... it was made from the meat off of beef ribs and ale [d'lish !!] ... do you make burgers from caribou ribs and home brew ?? if so, are they d'lish too ?
Never tried the brew but make good hamburgers all the time. Find some people who like moose meat don't like caribou but like that with all foods I guess.

Beef strips are nice marinated in thick soy sauce and then fried in oil and served with rice and garden peas ... do you ever do stuff like that ??

Videos are monetized so I get a very small check each month. I look at it as fun and showing people something they are interested in. RUclips makes it simple to upload videos. Not much harder than managing an email account. The video editing is more complicated but I keep it real simple and don't get very fancy with the fancy features.
@@stanzuray so simple cell phone video and upload? I've seen your mechanical contraptions on Yukon men. Simple and easy this is why I asked on your setup and equipment. You don't have to spent a lot on equipment. RUclips pays on views and it's all over map as most RUclipsr complain.

Is there still property to be had on the Yukon River?
Very little right on the Yukon River but the State of Alaska does have remote parcel land sales every now and then. Cheap, often very remote land. Get in touch with them and ask. Sure there is paperwork they can send or link you to.

Dumb ?. So you can freeze,thaw, process and then refreeze safely?
Yes definitely. This game meat is totally not aged. Really it needs to sit thawed for awhile but it usually gets eaten to fast for that. Freeze thawing does not seem to help the gourmet taste but that is not a priority.
