    Uploading this again with some better audio, thanks for tipping me off to that.
    The best nettle soup I've ever made. Years ago I had a really expensive dinner I was putting together. There was truffles, foie gras and caviar, but when I asked the guests afterward what their favorite course was, nettle soup won unanimously. Try it, love it, and make it again next year, or next week. You can use wood nettles or stinging nettles here.

    The thing i like most about your cooking is you never really use to many ingredients. Ive seen a lot of people over the years who forage and then try and mask the flavor of whatever it was they work so hard to find and harvest...i could never see the point in that.

      Thanks. Using restraint comes with time. I used to tell my line cooks to take 2 things off a plate or out of a dish before they added something else.

    One key thing about keeping the green I have learned as a chef for. Dice or soup like this is cooking it by ice water for a blast chill to help retain the chlorophyll within the sauce. If yoften let warmat room temp the chlorophyll will lose its fresh green and go towards browny

    My daughter (9) has convinced me to make this. I yeah yeah her and she picked me a ton of nettles! So I hope it's nice coz it's dinner tomorrow

    I am going to grow my own organic stinging nettles and look forward to making this bowl of soup in the near future! Thanks for sharing the recipe and for showing us how to cook some of the most nutritious wild greens (weeds, lol) around us. :) 😀

    I've been making this for a few years now and would have considered frozen nettles to be inferior, I was sorely mistaken. Thank you for the informative video!

    Hang on are the frozen nettles cooked?

      Yes but you could simply freeze wilt them.

    Hey there, love the video. Just got some stinging nettle myself today and my hands still hurt! One thing, could you shed some light on what you're doing at the end in the sink. Did you just reheat the soup over the stove and using cooler water in the sink to cool down the soup?

      Blast chilling the soup helps retain the green colour otherwise will go brown

    At what point do the nettles stop to sting? After they are picked or cooked?

      @@yaboifreshie2245Recipe’s on my site. Steam them until they’re tender and taste good to you. 3-5 min of steaming is fine.

      4 people @ 4k total. Not really complicated math, bud. Special dinner given to a couple employees of a local hotel chain as thanks for years of service. Corporations have big budgets.
