    I am from the Deep South and grew up having squash, sometimes breaded, some in casseroles, but my dad’s favorite was fried with onions.

      Put cornmeal on it and fry in the onions you can also fry zucchini with it

      Shred yellow and Zucchini chop up an onion, add flour and egg salt pepper . Fry in olive oil until brown. 😋

      Chelsea, Try pan fried/scrambled. Cut it up the same as you did coat in cornmeal salt and pepper a little bit of sugar put oil in your pan couple of tablespoons. You might need a little more and once it’s hot dump your squash in and you keep stirring it and it takes a while but as it browns, you just flip it over and stir it again and let it brown again and then keep doing that until it kind of scrambles together and it is so yummy. We love it.

    Did you know about peppers... the ones with 3 bumps on the bottom are sweeter and better for eating raw, and the ones with 4 bumps on the bottom are firmer and better for cooking 😊

      This is actually a myth and false. Sweetness depends on variety, ripeness, and growing conditions. There is also no such thing as male or female peppers. Pepper flowers contain both sexes and can self pollinate much like tomatoes.

    Down here in the southern US, we always get boatloads of summer squash harvest, so we get inventive with how we preserve it and how we cook with it. One thing that folks dont think about often is Squash Handcakes, like salmon cakes or potato cakes, but with squash and without salmon. Sometimes we mix in the plethora of zucchini as well, even potatoes occasionally. We shred the squash, zuchini, potatoes, onions. Add in an egg, a little flour or cornstarch/arrowroot to bind it, any spices, of course garlic... then form it into a pattie and pan fry it. It's a great "grab and go" food to have ready for the busy weekends or lunch through the week. We eat them hot or cold.

    You should try squash with eggs. Sauté some yellow squash slices in butter till they’re just about done and pour in some beaten eggs and scramble. Add salt and pepper. Sounds weird, but it’s delicious.

    I like my yellow squash a lot younger. The outside is a more tender and the seeds are not as developed, so you do not have to de-seed.

    In the south (usa) we dredge our squash in a mixture of flour and cornmeal and fry them till light brown and the squash are tender, salt and pepper as you like. So good. We also do green tomatoes this way also. Best to cook in a nonstick fry pan.

    Our zucchini did not do well, but our yellow squash is thriving. We are in S E Ohio. We have made squash Parmesan and love it. I am vegetarian but my husband is not. Garden season rocks my world!

    I never boil my crookneck or zucchini for fresh eating. I always pan saute and go forward with the recipe. I find the texture is better for me. I usually use a garlic and butter, or garlic/butter/wine sauce for saute. For casseroles I want a "flash" cook so that the vegetables are not mush. Great video. Thank you for posting.

    In the south in the US we preferthe very small crook neck squash over the large ones you are enjoying. Also the blossoms are sought have and stuffed with meats and other veggies and deep fried. My personal favorite is to parboil it and then fry with onions and adding American cheese. Yummy!

    I love yellow squash! They’re a staple of Southern cooking and have been for about ~5000 years. They were first developed from a native squash by indigenous peoples living by before Europeans showed up. You can eat them a thousand different ways. Sautéed with butter and sweet onions is excellent. Squash casserole is a southern delicacy. Halve the little ones, toss in oil and seasoning, and grill them. But my mom used to just boil them sliced and then we’d top it with butter, salt, pepper, and some shredded cheese. I actually really loved that as a kid. But I think it’s probably an acquired taste.

    Greetings from Athens Greece. While you were picking the cucumbers I was thinking...she should make a Greek salad with those. Hahahahaha ! I have to say you got the ingredients right. The only difference is that the ingredients are not chopped up so small. Same with the feta. I didn't notice if you added oregano.

    We eat the crook neck squash by frying some bacon, remove bacon then add onions & sliced squash & fry til tender then add the crumbled bacon. Sometimes we add sliced potatoes to it as well. Delicious

    Shread your zucchini and or squash.
    Chop One big onion into slices. Set aside
    Slice in 1/4 inch thick and cook a Polska kielbasa or your fav sausage up on med heat.
    When sausage is starting to brown add your zucchini/squash and onions. Salt n pepper to taste….
    Cook until onions are see through and zucchini/squash start to brown.

    I live in the South USA, on the Gulf of Mexico . We always plant Crook Neck Yellow Squash! They are the best! Fried up with Onions and bacon bits! We pick them small, about 6”.

    We love yellow squash sautéed in a tiny bit of olive oil, with onions as a great side dish. We cook zucchini the same way. Sometimes both at the same time depending on when they are ready in the garden!

    An article I read says when the tomato begins to show its mature color it is called the breaker stage. It forms a layer of cells across the stem which effectively seals the fruit from the vine .The plant can no longer contribute flavor to the tomato. You can harvest at this stage when problems arise. That would be forecast calling for frost, birds, insects or deer damaging ripe fruit. Rain after a dry spell will cause cracking, ambient temp. over 95* F. I was not able to harvest my Roma tomatoes due to something eating them. I waited for the blush stage and picked. They ripened and I now have some frozen for sauce. So personal preference to leave on vine or harvest at breaker stage. You have a magnificent garden. Love the information on preserving and canning.

    I made a casserole this week with yellow squash, zucchini and onions, sliced. Added a can of Rotel tomatoes and tomato sauce and cheese. Layered up the ingredients and then baked it. Delicious

    If you have an abundance of cucumbers you could slice them and put some salt and/or seasonings of your liking and put them in the freeze dryer for snacking.

    I am always amazed how you can grow so much in a short season!
    I’m in the Deep South and i have been waist deep in preserving for a month now. Still have a lot to do.
    I love crook neck squash cooked in gee, then mixed it with scrambled eggs freeze dry shredded squash to sneak in vegetables in meals.
    You can use yellow squash in any recipe that calls for zucchini.

    Crookneck squash does get large limbs. I’m from Alabama and that’s all we plant along with straight neck. Squash dressing is amazing. Using cornbread.

    I love yellow squash. I sautee' it with onion and bacon fat. I pick it much smaller so that the seeds haven't developed so much. Casseroles are also very good with cheese.

    Mix water, and Dawn dish soap, or any dish soap, and a spray bottle that will get rid of the aphids, may have to spray two or three times to get them to go away. Works wonderful and tomato plants also.

    I recommend picking them smaller. More tender and seeds are smaller.
    My favorite love them fried and I also make squash relish.

    Best side yellow squash recipe: sauté onions in olive oil until soft, then add yellow squash, bell pepper, garlic and salt. Cook covered until to your liking. You can then add pepper and parsley, yet I don’t think it needs it.

    I love home cooked meals, especially the ones that are comfort meals! It's hard for me now as my hubby passed last year. The meals are just harder for 1 person! I don't like them frozen and reheated either. You're recipes look scrumptious. Thanks for sharing all you do! ♥

    When the cherry tomatoes start to ripen they do fine fully ripening on the plants. The big tomatoes are always a few weeks later and by that time the birds and vermin have moved into the garden and they eat them if I let them ripen fully. Last year I left my beets in the ground a week longer than normal since it was such a nice fall. They looked nice and healthy from the top with lots of big, healthy greens. I pulled them, expecting them to be extra big. They were all nearly completely eaten. 😢 Lesson learned.

    I do a squash casserole without the chicken but with sour cream and a can of Rotel. Add Fritos to top and bake a few extra minutes.

    We eat our yellow squash with butter, sugar and cinnamon. So good.
    We also fry it in a pancake type batter. 😊

    Hello! I figured I would recommend this tip in case you find it useful I started using those metal tomato cages to support my peppers and it has helped WONDERS! My pepper plants actually grow much larger and produce much more now because they have that structural support. For how cheap the cages are, it’s been a fantastic addition to my garden!

    Chelsea, we here in the States, tend to pick our 'vine-tipened' tomatoes before they are FULLY ripe b/c the sun & warmer weather here will actually 'cook' them to some degree, resulting in a mushy texture. I'm certain you don't have that problem!

    I like to sauté the squash and onions in butter or olive oil until they are browning and then just sprinkle them with a little grated cheddar on them. So good 😊

    I made cages out of farmer's fence a long time ago for my peppers. I use them every year. They work like a charm.
    Boy, some sharp cheddar cheese would have been good in that casserole, too!

    I have always loved yellow squash. You can cook so many ways. I especially love squash casserole. Just sauted with butter salt and pepper till a little brown, or grill in oven. I put squash in freezer every summer, so easy. Try fried squash, batter and fry . I live in Georgia so many ways to cook.

    My Grandma 👵 used crooked neck squash for pies. She used pumpkin pie spice. It just had a different texture than the pumpkin pie. They were my favorite.

    Try the smaller crookneck squash…they are delicious. Dusted with corneal and pan fried (really it’s sautéed) in a small amount of high temp oil. Delicious!!

    As a Southerner, we always had a lot of cucumbers. My mom made at least 100 quarts of dill pickles...my sister ate a quart every time she studied. Even then we always had a gallon jar of peeled, sliced cucumbers, sliced onions, dill, and about 50-50 vinegar and water mixture. Every time that jar got below 25%, more cucumbers were added. It lasts months in the fridge and often even grocery store cucumbers were added to keep the jar full. They were on the table for every meal, but especially with sandwiches.

    For aphids I just use lemony soapy water (spray bottle mostly full of water, about 3 BIG squirts of lemon dishsoap - Sunlight is best) and spray it on, rub, walk away. Aphids deados.
    Your greenhouse is aaamazing BTW

    Yellow squash is great made into pickles using the bread & butter pickle recipe. It is so delicious on a fresh garden salad. 🥗 😊❤

      I was going to mention this too! Also, add thin strips of red bell peppers. Oh, so yummy! We add extra mustard seed. Last time all we could find was brown mustard seed. We preferred it.

    I'm also from south Georgia, and the BEST way to cook yellow crookneck squash is to halve and thin slice it, then fry it with chopped green onions, salt and pepper in a little oil until it's browned and has reduced in volume by about 75 percent. Sweetest, best thing you'll ever eat!

    Sliced yellow squash and zucchini with seeds lay in Casserole dish and are covered with stew tomatoes , lots of garlic and covered with ur. Voice of cheese. Or and Italian seasoning

    Yellow squash or zucchini is good slice along with some onions cook in spaghetti sauce then serve with Parmesan cheese. Quick and delicious

    That's great using your home made chicken soup because it has enough meat to just have it along with a salad. Where as using bought canned soup only has a couple tiny pieces in it.

    You definitely need some nice harvesting baskets, you might find some at your local thrift store. They would look nice stored on top of your cabinets when not in use.

    When I make squash casserole I add cheddar cheese sage thyme and chopped red bell pepper along with cream of chicken soup and sour cream and onions

    I make a casserole similar to the summer squash one, but I also add zucchini and then top it off with stove top dressing that is just made with melted butter and the dressing mix! Just wanted to share!

    Same here with the cucumbers! I have never had great luck with them but this year they are crazy!! I pick almost every day and the plants still look so healthy and loaded with flowers still! Maine here

    Stewed squash is a staple in our house during the summer here in Louisiana. Fry a slice of bacon in pot; remove; add a little bit of butter to melt. Can use just butter if no bacon. Sauté one chopped onion in grease. Meanwhile, quarter the squash lengthwise then slice it up. Add to the sautéed onions. Add about tablespoon of water. Salt & pepper to taste. Stir, Cover and cook until tender.

    You know I never knew you could get so many different varieties of tomatoes and I've never eaten squash but it looked good. As did your Greek salad which I would rather have than a pizza but we all love different foods. Great video as usual Chelsea thanks.

    Chelsea, you should try adding a ton of fresh herbs to your greek salad, would be a game changer for sure!! I usually just do basil but with your beautiful herb garden, wouldnt hesitate to add oregano and thyme too 🥰 I hope you give it a go 😄

    Growing up (in Texas), I only knew of one kind of squash, the yellow/crookneck kind. I was in my mid-20s before I knew zucchini was also a squash.

    Yellow squash can be straight neck or crooked. However, harvest them when they’re young & tender; too big & they’re tough & have large seeds that must be discarded. I feel the same about zucchini. I live in ⬆️state S. Carolina, about 1/2 hr. from the NE Georgia mts. In Dillard, GA, there’s a wonderful resort/restaurant called The Dillard House. Their food is wonderful, served family style. I especially ❤️ their Cabbage Casserole! When temps are cool, there are many fields of cabbages…a site to behold‼️

    I think another awesome recipe for all those cucumbers is Benedictine. I don't recall you ever mentioning it but if you have I'm sorry that I missed it. But Benedictine on a finger sandwich at a shower of any type or on a BLT instead of mayo is always excellent in my opinion. There are many different recipes and I'm sure you can access them all in abundance LOL! Thank you for another great video and God bless❤

    I agree with you about ripen on the vine but despite being covered something is eating them.
    Smart plan for he pepper. Your garden is amazing. I like squash including zucchini with butter, onions, salt and soy sauce.
    How do you fit those big bowls in your refrigerator?
    Pizza is the best . No cream of anything soup. So easy to make.
    You do know zucchini is a squash. It is.
    Fab it is.

    The garden still looks beautifully bountiful. I have yet to find a squash I like.😣I think all the smoke from BC came down here to Minnesota. We’ve had orange moons for the last week!

    Being in So Calif. where we grow a lot of summer squash, I would pick the crooknecks sooner. Less seeds and smaller seeds and less watery if you can catch them sooner, like 6 to 7”. 👍🏻
