Recipe
Ingredients
- 8 raw prawns, peeled and deveined with tail still on
- 1 sweet potato, sliced about 0.5cm thick
- 2 squash, sliced about 0.75 cm thick
- 200g tempura batter flour
- 50g flour
- 50ml dashi
- 40ml soy
- 30ml mirin
- 20ml yuzu juice
- 1 tsp cornflour
- oil for frying
- salt to taste
- optional Togarashi for seasoning
Method
1. Start by slicing all the veg. You can use mostly harder veg but you don't want things with too high of water content.
2. For the prawns, make 4-5 small slices on the belly so the prawns stay straight.
3. To make the batter, simply mix the tempura flour (you should be able to find it at most Asian supermarkets) with ice-cold water until you have the consistency of pouring cream. Try not to overmix the batter, small lumps are fine.
4. To make the dipping sauce, add the dashi, soy, yuzu and mirin to a small pot and bring to a simmer. Thicken it by mixing a tablespoon of water with the cornflour before adding it to the simmering sauce and mixing. You don't want a thick sauce just slightly thicker than cold soy.
5. To fry the tempura, get the oil to 160c then dust the veg and prawns in the flour, then into the batter.
6. Fry until crisp. You are looking for just a light golden colour.
7. Remove from the oil and onto a rack, season with salt and Togarashi if you wish (thanks to Steph and Marty for the ones they brought us back from Japan)
8. Enjoy it immediately before it loses its crispiness.

You are so right!! Everytime i watch one of these i feel, well, great! I get inspired, laugh, enjoy his fantastic skill. We dragged out a lot of old cast iron we inherited from a couple of hundred years of pioneers in Texas (my husbands family had a cousin who died trying to defend the Alamo), and started out refinishing them, and watching videos for ideas. This is the best channel! I want to visit Australia someday. A friend who traveled ALL the time (oil!), said she loved Australia the best out of the zillion places she lived and visited. She said everyone was so wonderful and she wanted to live there but couldn't be so far away from family. She ended up marrying a guy who was a manager at a Dairy Queen and moved to Marfa, Texas in the Big Bend country, said it reminded her of the huge spaces in Australia. Look up Marfa, its still the wild west out there! It attracts artists and those who love independence and big spaces. We have a friend who just moved there to buy a run down bar and live the life, so if you're ever in Teralingua, stop in at the Boathouse, and have a drink!

looks awesome andy!! filipino cooking tip - when preparing the prawns, sever the back tendons and pull them out, gently, into a more thin and long shape about as wide as a pinky - they will cook quicker and crisp up better :D great video!

Damn looks amazing I used to have this as a kid as ‘special food’ because stuff like this was considered unhealthy so I remember having this got my 8th birthday and I was so excited. We didn’t plate it fancy haha. Also love the bright pink chopsticks 🥢

@@krankarvolund7771 not necessarily I mean obviously deep frying is unhealthy but we ate only vegetables for it like lotus root and bamboo shoots and yams. Also the battery is quite light but yes it is unhealthy in some way but that was my first time ever having deep fried foods

It's not necessarily bad, if you eat that only from time to time like your parents did, the diet stay healthy, but fried foods is still inherently less healthy than non-fried foods, like a salad of lotus root and bamboo shoots will be more halthy than tempuras of lotus roots and bamboo shoots ^^

I lived on prawn and veggie tempura one summer when I was away in another town babysitting a bunch of pets for an old friends daughter. I had all expenses paid for and was told to go out and eat so I didn't have to cook. Found this wonderful, Asian pop up restaurant that cooked this dish to perfection. I could not get enough, and every day they used different veggies and dipping sauces. ❤
