It's like spelling and grammar natzies. If the cook is only person who is going to eat this, who cares if their hands are washed. It is their problem. It's a cooking show not a sanitization show.
From my understanding you may be talking about ricotta which is sold as farmers cheese and it is delicious and dry.It's sold in baskets which collect all the extra liquid from it.Italians use this when available for Easter and we will use it for a simple Italian cheese cake, pizza rustica,and cannoli,ricotta ravioli etc.Some brands that are in metal with the ricotta in plastic will have holes making it a close second.I have drained lousy ricotta for 2-3 days and it is not the same but close enough. I love your style it's so much like the real thing and if the kitchen is messy grab a striggo and clean it up. ❤ and Happy Thanksgiving to everyone. Mangiare,Fao ,Eat!

Just made this and I am in heaven ! Try adding a little more Swerve I used confectioners for the extra just dumped some in and some maple extract … a little swerve brown sugar to top it off !!! Yummy !
Almond or cashew butter has a milder taste, so i would use those. I do like this idea, and its quick and easy. Since it's not being baked, I would sub some vanilla protein powder for some of the flour, and use brown swerve to help with the cookie dough flavor, in my opinion .😊. Thanks Dave!

Don't get me wrong, I do a LOT of cottage cheese recipes, but I miss the stuff I can make that don't have a ton of butter, fried pork rinds, heavy cream etc. But hey, I understand you gotta follow the likes to get the cash. Can you sprinkle in some of the non keto recipes you have saved up you haven't released? Thanks. Again, I really am a big fan and still watch all the new keto recipes! ❤❤

Dave, You need to use multiple layers of cheese cloth. Just fold it (couple of times) before you strain it. Cheese cloth is so light, you need to double, triple it….

Dude, get a food scale...the rareness you will use your measuring cups you will end up not knowing where they went. You can ask ChatGPT to share standard measurements as well as grams. Grams and Milliliters measure the same so you have your liquid and solids just stick your bowl on the scale, tare it to zero and then tare it out after each ingredient. So much easier.
Probably would taste better, yes, but that would defeat the purpose for a lot of people. The point is that it's keto, so keeping carbs low and changing out the sugar for a non-sugar sweetener is important. If that's not important to you then swapping the sweetener for sugar would be fine and probably taste really good 😊 Something I've very much learned from working with my partner and I both having multiple food related medical issues is that it's very beneficial to learn how to be a bit flexible with recipes and realise that there is never one perfect recipe for everyone. Almost everything needs tweaking a little depending on personal taste or dietary needs and that's ok, even if that's quite a big tweak sometimes (unless you're doing something like cake baking where fairly small changes can lead to pretty spectacular disasters. Then you really need to know what you're doing before you start messing with recipes much at all!)
We like the chickpea cookie dough version, but I will try this. We do cheat, however, and use the Trader Joe's Cookiebutter instead of straight peanut butter, it makes all the difference.

Tips! Use a whisk for the dry ingredients, use a rubber/silicone spatula to clean out the blended cottage cheese from the Ninja.
I find that if you use an immersion blender into the container and smooth it out, you don’t have to strain it.

Farmers cheese is usually found at a Polish deli. Some meat markets carry it also.
Please try washing the cottage cheese with water in a mesh strainer. Very easy and separates pretty much all of the cottage cheese liquid.

Erythritol is not the same thing as Allulose. Allulose actually lowers your blood sugar. It is about 1/3 by volume less sweet than table sugar.

Our local Costco sells cottage cheese in solid blocks.
Funny thing about this edible cookie dough - add 2 eggs to it, and 2 moew tablespoons brown swurve, and you can make actual edible cookies :D
