You will never guess what those white truffles are made of! 😉 Vegan and gluten-free!

  • Those white coconut truffles are very creamy, delicate, and very affordable as they are made from... rice! That's right, cooked rice, is so delicious and so easy to make!
    INGREDIENTS:
    1/2 cup of rice
    1 1/4 cups of coconut milk or water
    1 cup of sugar
    1 cup of coconut milk
    1/2 cup of dissected coconut milk
    1 tablespoon of coconut oil or vegan butter
    more dissected coconut for covering the truffles
    METHOD:
    Add the rice and the water into a pot, bring it to a boil, then lower it to a very low simmer and cook until soft, for about 10, to 12 minutes.
    When the rice is ready, add it to a blender along with the coconut milk and the sugar and blend until very smooth.
    After blending the rice, add it to a skillet with the butter and the dissected coconut and cook in low heat until it becomes harder, you will see that it will easily come off the skillet when stirred.
    When the truffles are ready, add it to a plate, then place it in the fridge until very cold
    Then oil your hands, scoop a small amount of the truffle paste, and roll it between your hands forming a small ball
    Roll the ball into the coconut, and place it on a plate. Repeat the process until you have made all the truffles.

    I've never heard of this Brazilian treat. How ingenious to use rice! These would be a wonderful thing to have on a holiday dessert table this winter; they already look like little snowballs ; ) Thanks for psoting!

    Oh this is similar to how I make home made bounty bars :) love it, the combination of rice and coconut! Just amazing! I add desiccated coconut to the cooking rice and the done rice too

      I responded but it disappeared. Not sure, maybe bc I included a link … so just quickly it’s 0.5 cup each desiccated coconut and rice that cooked in coconut milk, once done, I add some more coconut. I like to toast these as it intensifies the flavour. The recipe called for sugar too but I find that the coconut and the milk makes it sweet enough for me, plus it’s covered in chocolate and that’s sweet too. So then you shape it to logs and cover with melted chocolate. This recipe also called for blending the ingredients, but I love the texture and I never blend. Hope this helps

    Sounds like a nice gift for friends for birthdays & xmas. I don't like coconut so perhaps we could coat them in chocolate, or will they melt?
