I had to laugh at your comments about embracing weirdness. Growing up, my mom was a teacher & my sisters & I were involved in many extracurricular activities. My mom always used instant mashed potatoes. I was an adult before I ever had real mashed potatoes cooked from scratch. It was a game changer for me. I still purchase instant potatoes from time to time to use as a thickener for soups, etc. but you just can't beat the taste of real boiled and mashed potatoes, loaded with butter. Alas, I'm low carb now and I sure miss my taters.
I love using my instant pot for quick meals. I just put it on sauté to get the pot heating up while I’m adding all the ingredients that way it pressurizes more quickly than normal. Love these meal ideas Mindy. It’s always good to have some staple quick meal recipes in your pocket for when life gets crazy. 😊
Although I try so hard to be careful I am the messiest cook I know! Watching you sauté the chicken and salsa wearing a white shirt (!). All I could think was how does she keep it so clean!! I have to cook in an apron.. and even then the splashes miss the apron and hit my shirt.. 😁.
I need to check my Walmart for that chicken in your first recipe. I've seen you use it before and I keep forgetting about it. Theres only 2 of us at home now and that would be great to have on hand.
Have you tried the parchment paper that is made for the air fryer? That way the air still flows through the bottom of the basket. Just don't put the parchment in it without food or it will blow around and potentially burn on the element up top
A favorite quick meal for my husband and me is to brown ground beef (for 2 I use half a pound), add onions and garlic, (and sometimes peppers and/or mushrooms) then sprinkle a package of brown gravy, add a can of cream of mushroom soup and then just shy of a can of water (mushroom can). Simmer for a few minutes, season with salt and pepper and serve over rice or mashed potatoes.
Wont deny, when you began mentioning pigs in a blanket on your kids menu I was thinking you were going to show us your quick and easy, or a different adaption, of it.. we are having pigs in a blanket tomorrow ourselves. We make pretzel dough and cover them in pretzel dough instead! Our favorite way of having them. Plus my youngest isn't a fan of hotdogs, so they get cheese sticks covered in pretzel dough instead. They absolutely love it.

That chicken dish (before you added the tortillas) would make a great dressing/sauce for a taco salad! I've had many a night where I make essentially spruced up queso, put it over a bed of lettuce and a generous portion of crunched up tortilla chips, and added any additional toppings I might want. Really easy and really delicious!
I love your videos! Made the chicken/rotel/sour cream/queso over rice tonight with shredded Colby Jack in place of jarred cheese (as it’s what I had on hand). The whole family liked it! Thank you for expanding the repertory at my place 😂❤

Oh my gosh that salmon looked so good! I purchased a large piece of salmon from Sam's Club and cut it down and froze in individual portions. I think I will have to try cooking it in the air fryer. I didn't realize there were so many great recipes out on the internet so I'll have to check them out. Ever since I have had Idahoan mashed potatoes, I am now fine with instant mashed potatoes. They have so many different flavors and they do not taste like instant mashed potatoes. My favorites are the buttery traditional ones in the red package and the garlic mashed potatoes in the green package. I grew up eating russet potatoes so I'm not a big fan of red potatoes so I don't really buy those but I definitely have tried several of the different options and the fact that you just add water to them and microwave for a couple of minutes and you have really tasty mashed potatoes goes right along with a quick dinner. I also like the Ben's instant cook in the pouch rice that also microwaves in just a few minutes. It comes in a lot of great flavors and different kinds of rice so it's another quick easy side. I do admit I sometimes take the easy route being a one-person household. I don't have to worry about feeding a crowd so I will sometimes buy the semi-prepared things. I figure it's better than going out or ordering in so I'm kind of taking a page from Sandra Lee's show "semi homemade".

So making the queso dish. I made something similar to the one pot Mac and cheese recently but the way you made it seemed so much easier 😂 loved the school lunch tray. My kids have unicorn shaped trays and I love sometimes recreating school lunches for them, they are homeschooled so they have no idea about public school lunches haha.
My teen on the autism spectrum actually prefers instant mashed potatoes over almost any other way to do potatoes. He really doesn't like them done from scratch so there are many dishes I need to use instant ones for.
We used to have instant mash potato sometimes, but not often. I don't know why because it is a lot easier than real mash potato, though not nearly as nice. Thank you for the video!

The school menus have went downhill. My family went to an after school family education event. They fed us a small supper of like a hot dog, bag of chips, cookie, and water. Another parent was sitting and talking with my husband and I. The other parent said, "My child comes home from school every day hungry. It is like they are just feeding the kids a snack." When I went home and looked at my kids' school menu, I thought to myself, "The other parent was not joking. They give the kids only a small amount of food." Some days it is only one of bowl food and a drink or a small amount of two food items and a drink. My kids complain the most about the taste of some school food.
I FOUND MY PLATFORM! School lunches are HORRIBLE! They took away milk and cookies recess field trips good lunches nap time and they wonder why we have ANGRY kids! ❤️ your videos!
Were you secretly at my daughter’s birthday party?? Lol! My mother in law has been bringing salsa and Queso dip for every birthday lately. Idk why. So, we have 2 jars of salsa to use up and 3/4 a jar of queso. I was Just wondering what I could make With those to use them up!
I airfry my chicken from frozen and season it as it's cooking -- it makes a meal for me when I'm super busy with classes or work and it gets me to eat a hot meal instead of chips, so it's worth it.
@@AnastaciaInCleveland So from frozen I place it in for about 5 minutes just to get it defrosted. You could probably do this in the microwave too. That's when I sprinkle my seasonings over it. Then I put it back in and let it cook for 5-10 more minutes or until the inside looks cooked. I don't own a meat thermometer. Always comes out fine and tastes good!

OMGsh, Ruthie has suddenly blossomed into a beautiful young woman! It's amazing how that seems to happen overnight, somewhere between 12-14. (I have twin 25yo daughters) And she's absolutely right about the way school lunches have cratered downhill in quality. Double the price - and worth about fifty cents, IMO. So sad that kids are put in that position - especially the ones playing sports - starving and nothing but high-carb highly processed cardboard on the menu these days.
Are you two realize that you don't salt pasta water to help it cook faster right? Is nothing to do with it you so pasta water to flavor the pasta because pasta is pretty much flavorless until you add other things to it including salt I got kind of confused when you were talking about cooking your pasta with the salt because you didn't want it to cook all the way through so maybe I took you the wrong way and it's a good possibility but if you think that the salt helps the pasta cook it really doesn't it's just for flavor but the food looked incredible FYI it looks really good and like you when I was in school we had Farmers wives cooking for us so everything was homemade from scratch and like your daughter my children do not get served the lunches that I was served and it's very disappointing

Another easy way to make mac and cheese is to use equal amounts of uncooked pasta, cheese, and milk. Cook. Add salt and pepper.

Great ideas! Angie from HotandFlashy uses parchment liners for her airfryer. More expensive but I like the fact that they are biodegradable.
