The lady at the soy marinated crab place really went out of her way to help you - truly kind. You both are very gracious and authentic. I think that makes locals want to help you even more. Alicia (?) setting a timer to not overstay at the foot bath place is exemplary of a respectful tourist.

If you like seafood go near sea eat raw sashimi called hwei. You can ask the restauant to make soup with left over fish! Also, clam bbq(chogae gui) is also fire! If you want new experience, try it. Just dont go to myeongdong or those kind of Tourist place. Price is so higher than other places.

If anyone wants to try raw marinated crab, you should do it at a high-end restaurant that only does raw crab. Although it can be very pricey, it's really the only way to fully appreciate the dish. It's definitely not for everyone, especially non-Asians, but it can be one of the most delicious dishes you would ever taste. Many Japanese people visit S. Korea just to have this dish. Anyhow, to properly prepare this dish is very time-consuming and expensive so it is not something you want to try at a food stall in a market.

I 100% agree with you about missing physical human touch. I've always loved shaking people's hands and since the pandemic I am scared to offend people by doing it. The gentleman who mixed the bibimbap did it that way to maximize the rice crispiness. The hot stone bowls crisp the rice at the bottom.

It is interesting to see you guys cannot be fully comfortable with the raw crab😂.
