That dressing u're talking about is *_"Aachaar"_* , i.e. indian pickle. Very frequently used condiment that goes with most savoury indian food. There's like thousands of different types because we make it out of anything n everything and most people have their own homemade version too. So if u're looking for a specific one, like how u liked what u had in this video, go ask about it at the very place u had it for the first time cus what u'll get else where might be different. The white yogurt thing is , diluted yogurt with cucumber n coriander in it (sometimes onion, tomatoes and potatoes too) along with salt n pepper (sometimes replaced by chaat masala). Not a drink. Supposed to be mixed in with flavoured rice like *_"Pulao/Pulav"_* or *_"Biryani"_* or even when u mix some other gravy (we don't really refer to it as sauce here in India, the liquid part of the dish is called gravy or curry or *_"Kadhi"_* ). Also had as a general side. The chickpea dish was what we call *_"Chana Masala"_* or *_"Chhole Masala"_* . Guy at the counter must've said chickpea masala so u could understand.

Next time get some chutneys, I love the mint one! The dressing could be anything because I’m sure every place may make their own… it might just be a type of chutney or something with Indian lime pickles!! Raita is not poured in curries to cook, it's specially only for rice dishes that too mostly for biryani as a side dish that you can mix with rice while eating to cool you down
Crunch mom was correct, it's Chana (Chickpea) Malasa. Chana masala is very easy to make at home and doesn't need too many ingredients; you should def try it.
