    Why is « 日本語 » used here ? To me it sounds like « a japanese speaking restaurant » because of the 語, would « 日本のレストラン » mean the same thing ?

      because if we don't add go then it's mean "Japan restaurant" and if add go then it means "Japanese restaurant"

    According to Google, 日本語レストランは、日本語で食事を提供する場所を指します。
    That is, according to them, 日本語レストラン indicates a restaurant that offers food service in Japanese. They don't have to offer traditional Japanese food, only that the service has to be offered in Japanese. This is probably not the intended meaning, and is what happens when you do a direct translation. I tried looking on google, but the only instances of "日本語レストラン" i could find were references to a book.
    A more natural way of saying Japanese restaurant, as in a restaurant that offers traditional Japanese meals, would be
    日本食レストラン. Some other comment mentioned 日本のレストラン, it means a restaurant from Japan.
    tldr the video probably meant to say 日本食レストラン and not 日本語レストラン.

    日本語レストラン feels unnatural (like a direct machine translation from English to Japanese). Instead, people usually say 日本食レストラン.

      incidentally, even though Japanese restaurant (an establishment that offers Japanese cuisine) is normally called 日本食レストラン, for restaurants offering Italian food we say イタリアンレストラン and for restaurants offering French cuisine we say フレンチレストラン or フランス料理レストラン.
