The reason why Percy saw Hades as his Principal is because he doesn't know how Hades looks like and the closest person he can associate with Hades is his Principal who expelled him from school. This is also how he saw the Oracle as his step-father who he sees as scary.

The gods are all different, so it makes sense they'd all have different feelings regarding their kids. Hermes and Poisidion have shown they care or are at least very attached while in the show Athena and Ares, clearly are not. Though its hinted that Poisiodon doesn't show his other kids (the non Demi-gods) that care, while Hermes has so far only shown that affection for Luke so it looks like they only show care for the kids they favour, though that level of care would depend on the god, since even though Ares and Athena have their favourite kid (they gave items to them, Annabeth with her cap and Clarrise with her spear) they seem far less attached than Poseidon and Hemes.
