    Why add cornstarch to your sauce, why not gravy it yourself first with a roux?

      Hi Aaron, good question. The roux method gives a more gravy like sauce as you said, where most Chinese/Asian sauces are clearer and not as ‘floury’ as a gravy sauce. That’s why cornstarch or potato starch is preferred. Also making a roux takes a little more time and effort whereas the cornstarch method literally is a few seconds at the end.
