  • How to make JAPANESE CHICKEN QUESADILLAS - Cooking with Chef Dai
    A quesadilla is a heated tortilla with melted cheese inside.
    I've including some less than traditional fillings to put a Japanese twist on this classic Mexican dish. I don't simply add Japanese ingredients for the sake of adding ingredients to call it "Japanese".The ingredients must harmonise with one another and ultimately the dish must taste great. Believe me when I tell you, this is one of my favourite recipes.
    The rice has a wonderful "mochi" chewy texture. The Chicken teriyaki, cheese and mayonnaise work so well together. The sweet sauce is balanced out wonderfully with the creamy mayonnaise and savoury cheese.
    This would make a perfect evening meal for the family, perhaps served with a side salad or even a lunch box meal for the kids.

    Prep Time: 15 minutes
    Cook Time: 20-30 mins
    Serves: 2 people
    Ingredients
    2 tortilla wraps
    2 Tbsp vegetable oil or any neutral oil (1Tbsp for frying the chicken, 1 Tbsp for applying to tortilla wraps)
    2 Tbsp mayonnaise
    1/2 tsp of salt
    1/4 tsp of white pepper
    4 chicken thighs (with skin or skinless)
    250g of mozzarella cheese or any other cheese you wish
    1/2 green pepper
    1 small onion
    1 nori seaweed sheet (typically used to make sushi rolls)
    200g cooked short or medium grain rice
    5 Tbsp of teriyaki sauce

    Loving these uploads, Chef. I love the use of nori and the second you hit it with that mayonnaise you entered okonomiyaki territory; I guess you could say this is an inverted or folded okonomiyaki. Thanks for sharing!

      Thanks so much for the awesome feedback Wilfred!!!! I’m glad you like the recipe. Honestly, I came up with this recipe on the morning of the shoot. Originally I wasn’t going to use any rice, mayo or nori and was going to serve it with some salsa, the more traditional way along with the Japanese teriyaki chicken.
      But I’m glad I used the rice, mayo and nori after after all.
      I was so happy at the way it turned out. My son even said it was one of the dishes that I’ve ever made. Please try it. Take care of yourself and family brother......

    I typically don't advocate mixing carb/startch products (with some excepts- like rice and potato in curry). But this sounds absolutely delicious and I want it.

    Omgosh Chef! Every time I watch your videos I am mesmerized by the way you chop chop chop your ingredients, the way you describe the food, and especially when you eat your masterpiece! I then realize my mouth is gaped wide open with my eyes bulging out in awe and I just start laughing at myself, really loud, because of how funny I must look!!! BTW this is a major munchies video lol!

    FYI you can just type some butter on the skillet and forgo adding oil to the tortillas. Also, lower heat will help you get that perfect extra crispy outer tortilla.

    Great dish idea for using up leftovers, especially if you’re primary cuisine at home is Asian. I almost always have those ingredients in my refrigerator.

    Chef Dai, I must say I've learned a lot from you over the years about cooking Japanese food but when you put mayonnaise on the quesadilla I lost a bit of the shimmer I have for you in my eyes.

      I hear you brother but hear me out. 1) don’t knock it until you try it and 2) forget about any traditional quesadillas you may have had before, this is not supposed to mimic one in anyway. This is a completely unique dish that I came up with and I promise you’ll be pleasantly surprised at how good it tastes.
      Definitely more Japanese than Mexican and is Japanese, we love our mayonnaise!

      @@CookingwithChefDai Honestly, I knew your angle and I genuinely love the approach to the fusion cuisine. Japanese food is probably my favorite to both eat and cook at home. That said, my hate for mayo is something I have a hard time getting over. But if you say it's good, then I'll have to try it and maybe send you a response video!

      @@wolfingitdown2047 I hate mayo as well but Japanese mayo is different and I actually find it less offensive. Also, homemade mayo is a real game changer. I made a tuna melt with homemade mayo and it was so good it changed my general aversion to mayonnaise. At least it's an ingredient that's easy to exclude on something like a quesadilla.
