I believe the two organs you called milt were actually nidamental glands, Masaru. Nidamental glands help build the mucosal case around their eggs. Given the size of those glands, and the ripe ova, I'd say she was just about ready to spawn.

Sous vide cuttlefish is just divine. I make it at home with an immersion circulator, a steel gastronorm box (1/3 GN, 20 cm deep), and a silicone bag (to avoid disposable plastic vacuum bags). Marinated in a little bit of dashi and sake, and pasteurized at 60 C for 1 hour.
Very little shrinkage compared to my inexperienced days, when I would simmer it in tomato sauce at high heat in hopes of it becoming tender. 😅
