- Dirty ice cream
This ice cream is originated in the Philippines. The two main ingredients are coconut milk and cassava starch. This ice cream is usually peddled in a colorful pushcart by sorbetero or the ice cream vendor. They are scattered around the cities or barrios in the Philippines, and you will know that they are around because you can hear the hand bell calling you. It is served in small sugar cones but some loves it with bread bun.
Why is it called dirty ice cream?
It is not actually dirty but when food is sell in the street we usually assumed that the food is dirty because it can easily accumulate dirt or germs from the street and some vendors doesn't use gloves in serving the foods. But still it didn't stop us to buy and eat the mouthwatering sorbetes in the street! However if you really want to be sure you can make it at home.
Ingredients Version #1:
1/2 cup cassava starch(dissolved in 3/4 cup water)
3 cups boiling water
3 cups coconut milk
2 cup powdered milk/skimmed milk
2 cup white sugar
flavors:
1/2 cup ube halaya(more if preferred)
1/2 tsp purple/violet food color(more if preferred)
1/4 tsp ube flavor(more if preferred)
1/2 cup strawberry filling
1/2 tsp red food color(more if preferred)
1/4 tsp strawberry flavor(more if preferred)
Ingredients Version #2
1/2 cup cassava starch(dissolved in 3/4 cup full cream milk)
3 cups full cream milk
3 cups coconut milk
2 cup powdered milk/skimmed milk
2 cup white sugar
flavors:
1/2 cup mango
1/8 tsp egg yellow food color(more if preferred)
1/2 cup cheese, grated
1/4 tsp yellow food color

Why is it that ur ist & 2nd mixture have the same amount of sugar when in fact the ist mixture has added 3 cups water(boiling), while the 2nd mixture is pure(no water).. meaning the ist mixture ay marami kesa 2nd mixture.Maybe the ist mixture isn't sweet or lack sugar? Magkasingtamis lng ang 2 mixtures? Hindi ba nababawasan ang sweetness pag may addl 3 cups water?just asking.

Cassava flour po dapat. Sa tindahan po ng mga harina ay meron din noon. Ang iba po ay matling ang tawag nila kc iyon po ang brand name

Pwede. I've tried it pero follow mp na Lang Yung video Kasi Ang problem sa cornstarch Minsan Hindi ma incorporate sa ibang ingredients.

Instead of using a bigger bowl & ice to cool down the mixture, wouldn't it be easier if stored in freezer for 5 mins or so?
