When I drove truck in mid/late 90's for a meat packing plant in New Brunswick Canada 🇨🇦 (only official bilingual province) English/French. I had delivered in the north where majority of people in the small town were French, but they had a Chinese restaurant and the owners were speaking Chinese/French, very little English spoken.

Hydrostatic cooling fan may be having issues or t-stat. A/C should not effect water temperature that much.

You might want to gently powerwash the radiator core to remove bugs/road debris that can clog up the radiator which can contribute to your overheating issue
