Easter Cocktail Challenge

In this episode, Justin challenges Kevin to make a cocktail based on the Easter candy that he's scarfing down: Peeps. Kevin obviously must accept the challenge to show Justin up. But what will he think of it? 🤔
Here's the recipe for Kevin's cocktail creation he likes to call "Peep This":
INGREDIENTS
1.5 oz gin
.75 oz 1:1 Demara simple syrup*
1 egg white
.5 oz Cointreau
1 oz heavy cream
2 oz Orange Juice (fresh squeezed)
3 Drops Angostura Bitters
1 Peep for garnish
METHOD
combine all ingredients (minus the Angostura bitters and Peep) into a shaker tin and dry shake for 30 seconds. Add ice and shake once again for another 30 seconds. Double strain into a coupe glass, adding 3 drops of Angostura bitters atop the foam and add a Peep as a garnish.
For the Demerara Syrup: combine 1 cup Sugar in the Raw and 1 cup water in a saucepan. Heat on high and bring to just before boiling. Remove from heat.

Why not melt the peeps into a peep simple syrup?

Y’know Rocky, I remember considering this and then deciding against it, but for the life of me I cannot remember why I did 🤔😆 could’ve been because Justin might’ve bitten my hand off if I’d taken more than one Peep away from him 😏 it probably would’ve made a decent simple if I added water to it so it incorporated better (than just melted ‘mallow).
