For those who may not know, a sixth option is to make a new layer on top of the layer you want to recolor. Change to the mode to color and it will cover over areas, including all the shadows/gradients/etc.

How to change the color of the text?
To do this, tap on the layer name of the text layer in the Layers Panel to select the text. Then open your color menu and choose a new color

In the current version of the app, you can only recolor one layer at a time.
