Beanie Weenie Tacos? Are You Crazy?

First off, it's not at all what you might be thinking. These have absolutely nothing in common with the dish you may be thinking of... other than the use of the frankfurters.
This is one of the most simple recipes you can make. And these tacos work great for breakfast, lunch or dinner! Start with slicing some franks, cut up some onion and slice up some jalapeno peppers. I find that canned peppers work best. If jalapenos are too hot for your taste, you can substitute mild green chiles.
For 8 franks, use half a medium onion, and four jalapenos. If substituting green chiles, use a small can of chopped.
Place the frank pieces, onions and peppers in a sauce pan. Add enough water to cover the mixture. Bring to a boil, then reduce to a simmer. Let the pan simmer for about 30 minutes.
While that is simmering, heat up one can of refried beans. Yes, refried beans. This is the beanie part. Also heat up the number of flour tortillas you think your crew might need. You will also need some shredded cheddar. how much depends on your personal taste. The cheese is optional, but I find it a must for me. But then, I'm a cheesy guy... lol.
Once everything is properly heated and ready, it's time to build your taco. Spread some refried beans on a tortilla, add the weenie slices and don't forget the onions and peppers! Add cheese as desired and eat. That's all there is to it. It just doesn't get any easier than this!
