I treat b&w film scans and digital differently when post editing, and a lot of it depends on how I plan to use the photograph. For my YT presentations, I do not post edit film scans preferring to show what the actual results are after developing in caffenol and to illustrate the work involved from start to finish.
Great question. Because I'm using a 4x5 Titan pinhole camera and have to time the exposure myself after removing the cap and then putting it back on I found the Kodak TMax 100 works fine. And the Ilford Delta100 as well. Pretty much depends on what you are envisioning and what you can do. As an example, I use b&w film because I develop it using Caffenol (instant coffee recipe).
