1950's Vegetable Soup

- No act of love, however small, is ever wasted.
Easy cooking for busy families The recipe is below:
1 lb of ground hamburger or left over roast
1 chopped onion
1-1/2 tsp. granulated garlic OR 2 cloves crushed fresh
1 can diced tomatoes
1 can whole kernel corn
1 can green beans
1 can sliced carrots
1 can english peas
All canned vegetable are added with the juice also in the can
Or add the canned veggies you like
1/2 a can of large tomato juice - add more if needed
1 Tblsp. powdered beef broth
Cook the meat and onion. Add the other ingredients and let simmer 15 or 20 minutes. Add....either elbow macaroni, potatoes, rice or some other type of pasta (just a few handfuls)...cover and let it cook until tender. Test for additional seasoning and enjoy!

This looks just like my Mom's vegetable soup and the way I make it to this day. I'm 65 yrs old and this is just the only way to make it. Only difference is I use tomato sauce and whole tomatoes which I just mash up with my hands. Im thinking she cut up s few potatoes also but I know I do!!! Always put cornbread on the plate/bowl and put the soup over it. There is nothing in this world like this meal. I could eat it for several days without getting tired of it. Just give me a glass of iced tea and Im all happy.😚
I'm 67 and my mom use to make this veggie soup the same way but with little diced potatoes, like you said...yummy. Now I'm going to make this soup for my mom and dad who are 92 and 94 to see if they remember eating this soup. Lol

Oh my word we ate this all the time, 65 yr old, various ways depending on what was in the pantry. Oops company showed up, open up a can, potato set extra bread on table or corn bread.
I could almost smell that cooking.......oh lord. My mom made hers the same way, except her secret ingredient was V8 juice....which I still use to this day. I use mostly frozen veggies now.......small head of cabbage....potatoes.........and chuck or ground beef. Course you have to have johny cakes to go with it!!!!!! But right now............you win the gold medal my dear. I just need a bowl please.
I wanted to create the exact recipe so I used canned veggies but from now on I'll use frozen...cabbage and some left over roast would really perk it up too. When I added the beef broth base, it really kicked it up a notch or two. That base will be a permanent addition! I will try the V8 next time! TFW God Bless, Linda

darlene palmer I used barley as a base too after I decided to go meatless. But when I had to go gluten free, didn't use any grains. Barley gave it a very nice hearty taste , imo.

Omgosh! My mother made this in the 70's..for us..I'm in my late 50's..and my mother made this the same way..then transferred it to a crock pot (the old round one that looked like a Boston bean pot)..this came up on my list..memories..Thankyou from Pennsylvania💕👍💕

I grew up eating this soup. Love it! My grandma would do this little trick on some days where she added WAY TOO MUCH PASTA at the end, and a lot of hot sauce, and called it Goulash. It was gloppy instead of soupy. We ate it and loved it. Bless her and bless you.

The beauty of it is, it's easy and makes enough to feed an army. I put a small can of tomatoe juice in spaghetti sauce. Please do not stop showing recipes because of sodium content. Just because some people may need to watch it, I'm assuming they are savy enough to adjust accordingly or not make the dish. The food police raises my bloodpresure more than salt ever could and I don't have high bloodpresure. Linda you and Sam are such a joy to watch. God Bless you both.
Ours didn't have meat or pasta but it did have potatoes. I may have to make some soon. I know most of my kids won't like it but I am missing my mom. This is one of her 'specialties". As others have said, we had it with cornbread.
I don't know about anyone else's family, but my mom was a child when WWII ended; she may have been slightly affected by the great depression but she never mentioned it.
She did go to her grandmother's farm every summer. She helped can and worked in the garden, etc. She didn't particularly care for it (or for antiques); she loved everything 'modern and new'. Cake mixes, canned goods from the store----if I am not mistaken ---had just become more prevalent and easily available during the '50s and moms made the most of them, didn't they?
It must have been an exciting time to be alive.

This is more like I cook now but my Mom's home was home canned veggies or fresh from the garden that furnished those used for home canned ones. She canned tomatoes, green beans and cabbage...not peas nor grew celery. Sometimes grew potatoes tho. And added a lot of chopped cabbage. Mostly, it was a Saturday soup where all the leftover veggies served thru the week had been saved for the soup. Like you, had everything in it that the pot could hold. Mine was meatless except for any butter or bacon grease that was on leftover veggies. There's so much in the soup, my hubby calls it veggie stew. My sister makes a veggie soup of ground beef. Mom even saved the white beans from another meal to put in veggie soup. It's just always So good. Helps catch us up on veggies in the diet for several days. Thank you for the memories and recipe too.
Yes we did my mother canned diced ,stewed ,whole . Bless her heart . And we still do it today . I use frozen saves on salt .
This is alot like how my mother made vegetable soup, except she used a can of crushed tomatoes and a can of Veg-All mixed vegetables. She always made homemade cornbread to have on the side. Loved to dip it in the soup.
She probably didn't add noodles either my mama didn't my grandma didn't it's almost like only these people who don't know how to cook add noodles
That is the most beautiful soup I’ve ever seen. Will definitely be making it. I think I’m going to add lima beans in mine. To the new cooks, add less pasta then you think, it swells up...I know from experience. Thanks Linda.
I use V8 in vegetable soup, it's good too, I also put shredded cabbage in mine.
Try substituting the tomato juice with V-8 Juice. V-8 Juice is thicker than regular tomato juice and would give the soup a little more body.
I always use V-8 juice. I love the way it tastes in my vegetable soup. Otherwise I pretty much do it the same except I add a can or two of diced potatoes.
My oldest sis always uses v8 for her spaghetti. Yummy
I made this yesterday and my gosh it was fantastic. I followed the recipe but using reduced sodium vegetables. I also added 3 stalks of thinly sliced fresh celery, used the full can of peas and I also used a full 46oz. bottle of V-8 juice instead of tomato juice. Thank you for posting this old time classic.

Yeesss!! Exactly how I like to make my soup! Only.....I throw about twice as much onion in it!!! I've never made soup that had too much onion in it (I think it adds to the flavor of it). Now all we need is a big pan of cornbread..........
Oh.....and I love to put macaroni in mine too..........

You're right..cornbread would have been perfect with this soup BUT..I'm trying not to eat so much bread and cornbread is my favorite. I would have eaten 2 slices with butter and I don't need it. I didn't have any crackers with it either. I don't have any willpower when it comes to cornbread but this soup is excellent. I hope you try it this winter...to warm your bones, LOL! I've added V8 juice to many recipes, and it adds a different flavor than tomato juice, along with more vitamins. I'm going to have to try this recipe, it looks awesome!
I remember my mom making this same vegetable soup when I was a kid back in the 50's. It was simple but good and even better the next day. Thanks for sharing, can't wait to make it, it will bring back good memories!

I've made a similar soup since the 1970s. Most of the time I use a beef roast (cubed) instead of ground beef. I hate English peas so I use Lima Beans instead. I add steak sauce, a little oregano and basil. Sometimes I put in Tobasco; depending on mood. A tablespoon of sugar to cut the acidity of the tomatoes goes in which is a tip my granny taught me when I was a child. To thicken the soup I add a can of cream corn at the end of cooking so it won't stick. Leftovers go in quart sized freezer bags for meals for my husband and me. I double everything so I have plenty of soup for several meals. I have cast iron cornstick molds so I bake cornbread in them and use real butter. I keep enough out for us for the next day and freeze the rest. If one or both our sons come over unexpectedly, then all I have to do is bake cornbread and we have a hot meal. They love my soup also.

Well Linda I sure remember something like this from when I was a kid in the 50s. If I remember right most of those "canned" veggies came from jars that my mom and grandma put up themselves. Never the less, that is one big pot of soup that brings back a lot of memories.
My mom put up her own tomatoes, too! I remember running to the store room, and getting my mom a quart of tomatoes when she cooked this!
Yes we always had a big garden that we got all our vegetables from. Growed, picked, and canned all of it or we didn't eat. There was no kid not wanting to work because if you didn't work you didn't eat.
We did the home canned from the quarts on the shelf in our home. Made our own canned diced tomatoes. Sometimes even made a few quarts of mixed vegetables we used for this type of soup.
Yes, my mom did, too, in the 70s and 80s, we would go to North East, by Erie, Pa, every year, and pick tomatoes, purple grapes, other things. They would can for a week. Tomatoes, grape juice, etc. They would pick strawberries for Jelly. We would go pick peaches and cherries. Now, it is almost cheaper to buy it from a store. It is so expensive to pick strawberries, now. I think people just quit canning, so much, and, now, you just have people who are raising big families, so the prices are outrageous. A quart of "pick your own" strawberries is over $3 or $4, now. A quart of blueberries is usually $4, here, as well. I have a small garden, but would love to make a huge one. I want to work on that this year, making a bigger garden, I have a big area, but I don't have a lot of fancy equipment, so it will just me me and a shovel. 😆

I grew up in Northwestern Quebec and my parents bought mostly canned foods because fresh was too expensive or not available. Your soup looks terrific!
With those long winters up north, no kidding. But in the short summer vegetables grow speedily, and many older folks used to waterbath can for the cold season, and beginning of spring. The lean times throughout the year. 🍅🍆🥔🥕🫑🌽🧄🧅🥬🥒🥦

That soup looks great I make this during the winter months and everybody loves it. The sky is the limit on what to use. I use canned veggies and add fresh potatoes, onions and cabbage.

This was clean out the refrigerator or leftover soup when I grew up in the 50’s. All the meat and veggies were homemade or grown! Still try to make it today!

Linda you brought back so many memories of my Mother and Grandmother's cooking vegetable soup. In the 50's times were tough for us. There were 7 in our family Daddy was a baptist preacher when preachers didn't get paid. So we ate a lot of soup and beans and taters! My husband and I love soup during the winter so this will definitely be in my rotation. Much love and blessings to you both.

Yes, beef vegetable soup. We always add cabbage, sweet peppers and any vegetables we had on hand. Never hamburger though, chuck roast cooked and we used that and the beef broth from it, not much if any tomato juice. My favorite soup. Now I use frozen mixed vegetables, plus fresh. Mother used canned and fresh. Mostly home canned. Always potatoes, no macaroni. That's how Mother made it and I am 84. Nice video Linda. Have a wonderful week.

Yes we did have a freezer part of the time I was growing up. My Dad made the first one. A big old ice cream chest freezer that probably came out of an ice cream parlor. Our frozen veggies came from the garden.

Now I was not born in the 50s, but this SO reminds me of my Mum making beef and macaroni soup, and she would add veggies from a can, or frozen. Whatever she had Peas were a must, and sometimes green beans. It looks so homey and comforting. With the crackers, you win! You almost make me want to do a video on beef macaroni soup! Thanks Linda. I actually really enjoyed this video recipe! And I do NOT buy things in cans, but as you said - you can have a nutritious meal for cheap!

Almost the way I make it. I use a hint of allspice,parsley and a little basil and a little garlic. V8 is a good tomato juice to put in. Thanks for sharing!

Yes barley was good grandma made this used oxtails to make vegetable soup so good.. good memories as a kid ..now we have the hamburger use here as I'm a grandma ..
I use a beef bone and add potatoes in mine. So did my mom who was 25 in the 50s she always added a beef bone. It was delicious this looks good too.

My mom passed before I knew exaclty how she made this but it seems similar. Except my mom made the hamburger into tiny hamburger meatballs and she also put cut cabbage in it. I've never found a similar recipe until now.
My mom added cabbage too at the very last because she didn't want the Cabbage to get too done... cabbage doesn't take but five minutes or so to cook

I make vegetable soup with riced cauliflower & broccoli with canned tomatoes & juice, chicken broth... I rice the frozen vegetables after they've thawed slightly. Sometimes I throw in canned green beans or corn, so it's kinda the same concept and just as easy. Vegetable soup is just always good to have, I've used diced potatoes and that's a great add because it has starch, if you want a thicker soup. This does seem like what my mother & grandmother used to make ...especially the elbow macaroni. Yeah you can throw anything in tomato juice and v8 does help the base! I want to make some now. I'd been thinking about soup all week!

I like adding different kinds d of beans sometimes. My mom grew me up on stuff like this as well. A single working mother back then had to eat cheap and feed my grown ass lol.

Yes I like since it is so versatile. You can add so many different things or just have a couple items.
Especially at the end of a garden season. You can use your last pickinns.

Linda I add V8 juice and it’s even better than tomato soup. I was out of tomato soup,our SUV was in the shop and I wanted to make this soup. Hubby was too busy to walk to the store about 1/4 mile away. He said,” we have a large can of V8 inthe refrigerator in the garage. I put it in and won’t use anything else. This was in 1990. I’m 73 yrs old and have made this for years. I do dice some potatoes and put them in. I have diced a piece of London broil and browned it then add to the soup. Hubby like the beef, I like hamburger or sausage in mine. Keep cooking! I love your recipes.
That looks like the typical vegetable soup my Granny and my Mother used to make frequently when I was a child in the 1960's. Most of the vegetables were home canned or came fresh from the garden.
My two brothers and me had a wonderful childhood. We were raised in a time when the family owned one car for the Father do drive to work, if any at all. All mothers I knew of were housewives. Some women are offended by that word now. None that I knew were. To them and to me, it was, and still is, a title of honor.
Our Dad taught us how to raise a garden. He also taught us how to paint, roof, and maintain a house. He taught us how engines work and how to overhaul one, how to change a flat, how to change oil, and so much more. And he taught us how to be a Father, a husband, a responsible adult, and a good neighbor.
Mom and Granny taught us how to cook. I learned very well. Having recently retired, I do almost all the cooking for our household of three. I also cook Sunday dinner for our three grown children who bring their spouses and our grandchildren for the day. I make a great effort to have everything well prepared when they arrive so we can make the most of our time together. I teach my grandchildren the things my grandparents taught me. And they are very interested and ask me to show them more. They're all at a wonderful age right now and these years are precious.
I make enough food for them to carry leftovers home. And I get great joy from seeing our grown kids cooking at home serving the same family recipes I enjoy so much.

I decided to make this soup again. I added egg noodles this time. And since it was a family tradition to eat soup and sandwich every Sunday night-I decided to melt some Tillamook cheese on bread instead of making sandwiches. We had one of our daughters and a couple of grandkids over for dinner tonight. They all enjoyed it.

Yiu got me making this a lot. I learned that I need a large pot to fix it in.
I add frozen okra and squash and potatoes and fresh Parmesan on top.

I have never added the liquid from the vegetables but I will give it a try. One good trick I’ve learned in my 65 years I add a good pinch of red pepper flakes just for flavor and just a good splash of chicken broth to rinse out all your empty cans. I have never tried the soup either but I will. usually just canned tomatoes and sauce thank u
My grandma's name is Linda, she makes it the same way except she puts cabbage n potatoes in hers and without the macorini still good tho. One of my favorite meals
I use V-8 or Tomatoe Soup..
