I cook this but I use very little oil to fry eggplant, eggplant is like sponge absorbs all the oil from the pan.
or grill them in the oven. this is very yummy recipe

You can slice the egg plant and put some salt and oil and bake them

Mazar Cuisine I chop mine, add tomatoes, onion, salt, cumin and pepper and bake until it’s falling apart. So yummy! And I’m just a city girl from Kansas USA. I love eggplant.

Salam how did you soak the water because it looks very dry when you firing the egg plant Aldo it didn't Osborn that much oil.and at the end there was no oil when put it in the plate. Thanks

salam dear . soak the eggplants for 20 minutes in salt water it Will get rid of bitterness. then remove all the eggplants from the water and gentley squeeze them then fry them after you r done frying take out some of the oil just leave a few Tbsp
