I grew up in Alaska, and this was an item you could find around on menus. Now in Montana, it’s certainly not a thing. But, this region has stuff that I can’t find anywhere else. I have to agree with Chris-putting things like salt, mayo, onions, egg, etc is a very European thing. It gives the patty a bouncier rubbery texture. Which makes sense bc pre seasoning meat is exactly how you make sausage. I just prefer my patties to be more tender instead of sausage-y

I also am always surprised when I see southern cooking (or even parts of culture, like the card games that are prevalent in the south compared to the rest of the US), how Hawaii is to the south. The point is, I understand why he went down the wrong path to the wrong region.

There are a lot of links/parallels/influences between the South and Hawaii. To name a few, there is the shared but not completely identical plantation past, Spanish/Mexican influence - see: paniolos and cattle ranching as well as kiho'alu (slack key guitar), the love of rice (though the origins are different), and Manifest Destiny.
