Honestly surprised that Chis didn't know what a Loco Moco was. As always, he does an amazing job on figuring out the dish by just touch and taste.

chris catching soy sauce in the gravy and trumpet mushrooms on his first taste but somehow coming up with rice-based grits is one of the funniest mistakes he's made recently lol. what a cool regional dish!
I haven't watched the whole video yet but I would assume he got thrown off because the rice wasn't washed which made it more clumpy than rice would usually be

Yes, I appreciate a judge who gets just how impossible a job he has and rewards him for what a great job he does. I hate the picky judges.

So there actually are rice grits (I live in the South). Often used in killer rice pudding. Basically just broken rice.

Fair play to Chris, if you have never heard of loco moco before, it is such an amazingly random (and amazingly delicious) combination of ingredients.
As a Californian with access to chain Hawaiian cuisine and stand alone restaurants I’m amazed Chris hadn’t heard of Loco Moco - such a yummy dish
As a native Californian who also travels to Hawaii frequently I too am surprised he had not heard of Loco Moco. A true staple.....
I agree. But at the same time there’s still a magic to certain elements of regional dishes. Not everyone around the world knows about them. I grew up in Alaska, and this was an item you could find around on menus. Now in Montana, it’s certainly not a thing. But, this region has stuff that I can’t find anywhere else. I’d love to know the secrets each place offers but there’s still a lot of surprises everywhere!

Had loco moco a lot of my life, it's extremely easy for anyone to make it at home, basic is rice, brown gravy, hamburger, and a fried egg and you are like 90% of the way there. The mushrooms, onions, and fancy gravy adds to it but unnecessary
Best I've ever had subs the hamburger for Hawaiian fried chicken! Close second was another place that did it with corned beef hash, Portuguese sausage and hamburger. Dang, it's almost midnight and I want to make some late night loco moco lol!

I really had to check my own biases on this one when he didn’t immediately say Loco Moco!
Weirdly, this is one of the few times where I feel like I'd pick up on the dish, but I live in Japan, so... I have issues with how Chris approaches cooking mushrooms in general. Dehydrate them a bit first and give stuff space to soak in instead!

Watching this I've had two thoughts. One, it's a classic case of having a gap in your regional cuisine knowledge combined with overthinking a simple preparation. Two, I'm sure it tastes great but making Loco Moco in a fancier way seems like kind of missing the point of the dish.
I have to agree with Chris-putting things like salt, mayo, onions, egg, etc is a very European thing. It gives the patty a bouncier rubbery texture. Which makes sense bc pre seasoning meat is exactly how you make sausage. I just prefer my patties to be more tender instead of sausage-y

That’s how hamburger steak is typically made in Japan, with bread crumbs and onions mixed in. There’s a lot of Japanese influence in Hawaii local dishes

Funny, Kitchen Bouquet was in my mom's cupboard as far back as I can remember, and now it's also in our cupboard, but I don't recall ever using it, or seeing it used? FYI, I'm 63, and have no idea how this got into my kitchen, maybe the wife bought it, maybe I don't remember buying it, but it's there!😅👍✌🗽

Chris never ceases to amaze me.
While I find some of the missteps a little surprising because Chris Morocco was initially SO close. I also am always surprised when I see southern cooking (or even parts of culture, like the card games that are prevalent in the south compared to the rest of the US), how Hawaii is to the south. The point is, I understand why he went down the wrong path to the wrong region.
So do I, and I'm Hawaii-born and raised.
There are a lot of links/parallels/influences between the South and Hawaii. To name a few, there is the shared but not completely identical plantation past, Spanish/Mexican influence - see: paniolos and cattle ranching as well as kiho'alu (slack key guitar), the love of rice (though the origins are different), and Manifest Destiny.

Loco Moco is my fav!!!! It was the best thing after a big hike on Oahu. Total perfection.
Once Chris realized there was a gravy, I thought he would for sure put it together that it's Loco Moco! Also, "rice grits" is an all time guess for this series.
