I'm just too amazed with how close he gets to be worried about the precise details he misses. Sure it'd be great if he could get it perfectly every time, but then it'd be taken for granted and I think the episodes would lose some of their magic.
I think Chris's series is better because there is a hard stop on day 2. Claire has to keep going until she nails it, her only out is victory. That's the problem with gourmet makes.
I would say at least claire can see what she's trying to make and even look at ingredients and even how it's made, but considering it still gives her such a hard time I think it really illustrates just how difficult it can be to recreate factory produced thing with just what you'd have in a typical kitchen.

my mum taught my that crustaceans like lobster and crabs can't really perceive the heat so it would actually more "nice" to put them in the boiling water without stabbing them in the brain.... but I am not sure, so everyone should do it like how they are comfortable with it ^^

In a way though the whole process is pretty effective in showing what ingredients are essential to the recipes and what ingredients are barely discernible in the final flavor and therefore can probably be left out or substituted. I mean, if our super taster Chris Morocco can't even tell the ingredient is in there, do we really even need it? 🤔Chris even said in this episode "If you can't taste it, what's the point?"
Same with spring onions. He always struggles with them and they have a very distinctive flavour. Unless they are just bad in the US. Because here in the UK, a spring onion is very flavourful.

No. It's a classic French dish and his instincts matched the classics almost to a tee and why would he expect some dopey version by a hip hop pot head to deviate.
To be fair Cheeese is one of the hardest things to figure out when you can't see it. I mean some are obvious, but there's so many freaking types of cheeses. And here they mixed 2 cheeses which makes it even harder to tell.
I find it quite unfair when Chris detects an ingredient but its in the "sauce" instead of the "toppings" ... like the man is doing this blindfolded. He is getting the raw ingredients right and I think that matters more than being able to magically distinguish whether it's in the toppings or sauce when they are all mixed together. Alas, its an arbitrary grading system, I'm still blown away with his accuracy. I'm way to indecisive to pull anything like this off
When I watched the first couple episodes, I thought about this and it irked me too. Because as you say, the ingredients are mashed up and it's almost impossible to distinguish if it's in the topping or sauce, whatever. However, the ingredients are indicators of how the dish was assembled, so to compensate I think the the editors should highlight the ingredient in green, but add an X to indicate it's in the wrong part.
I think he was underthinking in this case, lol. He never tries just a spoonful of the entire thing to get a whole bite and see if he can detect anything else. He always just takes little nibbles off the top. I swear he misses more stuff that way and maybe could've detected the other cheese, lol

Does the cracker even matter though? He accurately recreated the taste of Ritz cracker crumbs with bread crumbs, butter and seasoning. I mean both are made with flour +butter +salt... I dont count it as a missed ingredient at all, he just made his own

To be fair Cheeese is one of the hardest things to figure out when you can't see it. I mean some are obvious, but there's so many freaking types of cheeses. And here they mixed 2 cheeses which makes it even harder to tell.

I find it quite unfair when Chris detects an ingredient but its in the "sauce" instead of the "toppings" ... like the man is doing this blindfolded. He is getting the raw ingredients right and I think that matters more than being able to magically distinguish whether it's in the toppings or sauce when they are all mixed together. Alas, its an arbitrary grading system, I'm still blown away with his accuracy. I'm way to indecisive to pull anything like this off
When I watched the first couple episodes, I thought about this and it irked me too. Because as you say, the ingredients are mashed up and it's almost impossible to distinguish if it's in the topping or sauce, whatever. However, the ingredients are indicators of how the dish was assembled, so to compensate I think the the editors should highlight the ingredient in green, but add an X to indicate it's in the wrong part.
Carla's grading here is inconsistent. "The appearance is almost identical - 80%. The gruyere makes for a big taste differential - 80%."

I think he was underthinking in this case, lol. He never tries just a spoonful of the entire thing to get a whole bite and see if he can detect anything else. He always just takes little nibbles off the top. I swear he misses more stuff that way and maybe could've detected the other cheese, lol
