When I got the car, it had a bunch of issues so I’ve been replacing pretty much anything that I can just so it’ll run and last a while without issues

When they say you have to replace O2 sensors in pairs, does it mean you have to replace the upstream and downstream one at the same time?
Yes you should do both at the same time. However, some engines in general like V8s will have an exhaust coming out each side with a pair on each side
