    While traveling I had this dish at a Thai restaurant in San Jose, CA with my husband before we were married. That was over 8 years ago! I’ve been wanting to recreate it since but it’s not very common and I failed at too many at-home attempts. I had given up on ever having it again. Until I saw this video! Hope revived! My family thoroughly enjoyed this for lunch today. I never comment on RUclips videos but had to tell you this was great. We swapped out the chicken for some tofu, added bell peppers and onions, plus made sure our chili paste was shrimp and fish sauce free. Amazing! Will be making this lots!

    Just made this dish tonight and LOVED it. Easily as good as any stir fried thai basil eggplant dish I've had at a restaurant. I loved the pre-sauteeing technique for the eggplant.

    Hi Pai, love the recipe. Can't wait to try. Suggestion if you cut a small hole into a cling wrap (saran wrap) put the pestle through the hole and wrap the cling wrap around the mortar then pound your ingredients that way nothing will bounce out.

    I cooked this dish without chicken. It is very very delicious. I used chili paste "pantai" brand "medium hot". It was not spicy at all, i could taste it, it tastes very nice. I used small eggplants like ping pong balls. Thanks for the recipe, will cook it many times again for sure

    I love when you give alternatives for vegans or vegetarians. I would be thrilled if you would write a vegan Thai cookbook. I found one on Amazon called Buddha's Table, but I was not impressed with it, it does not inspire me to cook anything. Your channel was the first I subscribed on youtube (almost since the beginning of your channel) and thanks to you I learned how to cook Thai food with the utmost confidence and ease--I no longer go out for Thai food! Thanks for all the work you do. I love how talented, professional, gracious, and humble you are.

    Its looks delicious and seems less time-consuming. Eggplant is not my favourite vegetables but seeing this recipe I bet I should try this one out soon.I can't wait to go home soon.

      This is way better, eggplant is the dream food for losing weight. It has only 24kcal in 100g. It takes more energy to digest it than you taking from it.

    Tried this recipe and it was really good. The basil really balanced out the funkiness of the fish sauce and especially the chili paste. I think I may still use a bit less of both next time though. I also baked the eggplant so I didn't need any oil, and it worked great.

    I just made it and tried a bit. Oh my goodness. Beyond delicious 😋
    Unfortunately I can’t find Thai basil right now in Singapore but even without the dish is incredible. With the basil it will give it an extraordinary dimension so will definitely keep this recipe and make again and again.

    I bought pantai's nam prik pao and used it as a substitute of sambal (eating it along side the meal, just as it is, without cooking it prior). I found it to be overwhelmingly too sweet for my taste, not spicy at all, and also very shrimpy. Honestly i wasn't a big fan. But then i found your recipe and i literally just tried this recipe an hour ago. I loved it!! It wasn't as sweet as it was before, it's just so good and savory. Next, I'll try your salted egg fried rice recipe coz i know you use nam prik pao in that recipe, and I'm sure im gonna love it. Love from Indonesia. 😘

    I have found that when using ground meats, boiling the meat in a small amount of water breaks down the meat into finer particles that the standard saute or stir fry. That can be a benefit or a liability depending on the item that you are preparing.

    I already know I'm going to like this version better. I made a Chinese egg plant stir fry the other day but I didn't care for the suace much (soy suace dark and light, black vinegar, chicken stock, sugar and cornstarch slurry to thicken). I found that I much rather the Fish sauce, oyster and sugar combo, especially if you add the smashed garlic and chilies.

    Nothing beats home made but Mae Pranom brand nam prik pao is my favorite brand too. When I lived in SF, I used to buy it when I visited my sister in L.A from the Thai markets in Hollywood.

    I've always grown up with the belief of looking away when pounding pepper too! 😁 which is funny because even if you look away, the distance from your eye to the pepper is still the same.

    I made it with tofu instead of chicken, skip the oyster and fish sauces, and add a little bit of sugar. It was delicious!!

    I love your recipes and the way you teach us. You keep things simple yet inspire to step out and explore new things. BUT...my favorite part is when you take that first bite. The look that comes over your face, the partial closing of your eyes, and the "mmmm". Mark Weins has his head roll but the boy can't touch your ecstasy expressions. Lol. 😉❤

    Oh, and while you have halved your eggplant anyway for the cutting, do soak it in cold water for half an hour. It will absorb up much less oil afterwards. Otherwise aubergine does soak up the oil in your pan amazingly fast. Add more and that too is gone in a snap.

    This is one of my favorite dishes. Is there a brand of Thai Chili in Soya which does not have MSG? The only brand that my local Asian Market carries has MSG.

      I think she used Thai basil (bai horapa) and not holy basil (bai krapao). Thai basil has an anise flavour.

    Hi Pailin! Can you make a Thai dish call "Pad Phet"? I don't really remember exactly, but it's like southern Thai curry paste stir-fry. I haven't seen anyone done this dish on youtube before. I tried making it from scratch based on online written recipes, but it did not come out as I expected. If you can make it, it would be really great! Thanks!

    This looks so good! Can you do a tofu stir fry dish??? I'm just curious about how I can make more tofu dishes Thai styled (yes I know she's posted some like that already!) I can't wait to have my own place soon so i can make so many of your delicious recipes!

      I don't see why you can't replace the chicken with cubed firm tofu pieces. Unfortunately I've developed an allergy to soybeans so I can't test the recipe out. I do miss making and eating my tofu cheesecakes and soups.

      rsvpurgt Because tofu isn't a meat substitute: in most dishes, the meat is a flavor *source*, while tofu is a neutral flavor *carrier*. If you wanna omit the meat, you have to find a replacement for its contribution to the flavor. Tofu and eggplant both tend to absorb the flavors/sauces. I honestly suggest that tofu never be attempted as a meat substitute -- it's better to make dishes that were designed with tofu in mind. (Mapo tofu, if you've never had it, is life-changing. And just to change things up, you can replace the tofu with eggplant, which comes out different and equally mind-blowingly delicious! :D)

      I've made this dish with chicken. The chicken is not the source of flavor. The chili paste is. That's why I think you can use tofu. There should be plenty of sauce to coat everything.

    I cooked this dish last night and it tasted amazing. But there’s one problem tho. I used quite a lot of oil while frying the eggplant. Eggplant just doesn’t seem to stop absorbing oil from the pan. Does anyone else have the same problem? Are we supposed to soak the eggplant in water before cooking it?
