I just want to thank you so much for posting these meal videos because the temptation to spin the block at Popeyes is very real for me. I’m trying to rewire my brain on “good food” and every meal that you post looks so satisfying and fulfilling that I end up making those instead of falling off the wagon. Favorite meal at the moment is a rice noodle stir fry. I use whatever vegetables I have on hand. The key ingredients are tamari/soy sauce/aminos (either one), authentic Thai chili paste, and vegan fish sauce. I discovered vegan fish sauce last year and have been putting it in everything! 24Vegan brand is my favorite, so far. Wonderful video. Been riding with you since your early Plant Based Princess days. I'm happy you took the time you needed away from this platform (and hope you always do that when you feel called to), but I'm equally happy to see more videos from you again 😊. Oh, and top the stir fry with scallion and roasted peanuts. SO GOOD!!
My favorite meal at the moment is zuppa toscana, a popular soup from Olive Garden that I’ve adapted to make vegan at home. I use loads of minced garlic and onion, and a little olive oil as the base. Sauté it and then put some vegan Italian sausage in there (you can substitute this with your own faux meat creations if you are trying to cut down on processed foods. Shredded tofu mixed with oregano, rosemary, thyme is an awesome substitute) and the secret ingredient is some vegan chicken bouillon base! Now this is naturally salty so u want to taste it before u add more salt! To thicken the soup, you can add a couple of tablespoons of flour and whisk that in to the mixture or if you’re keeping it gluten free, use tapioca flour or an equivalent gluten free flour that you like. Then I add cubed gold potatoes, and some curly kale and enough water that just barely covers everything. Then I add one can of coconut milk and then cook until potatoes are soft! It’s DELICIOUS! The coconut milk makes this soup rich and satiating so don’t forget to add it. The vegan chicken bouillon gives it the umami flavor it needs so DO NOT SKIP THIS PART! Bone apple teeth! 😂❤
This is my go-to meal. I make this soup at least three times a month. It is quick and easy. I sauté cut up petite potatoes, onions, garlic, and meatless ground. I then add water, plant based heavy cream and lipton's onion mushroom soup mix, better than bouillon Italian herb and pepper. I let it cook for 20 minutes, add in kale, and it's done. I will have to try your version soon because I want to add the tofu. Thanks!
I needed this video! Postpartum had me in a chokehold and my eating went to ish!! My little lady is about to be 6 months old and ready for solids! I'm going to use this time to get back on track!
Heavy on listening to your body. I ate some Burger King today which wouldn’t be an issue usually but halfway into the burger I just knew my body was going to reject the food. I’ll spare you the details, but it made me realize that I hadn’t eaten a home cooked meals in a minute, and it’s finally caught up to me. At my grown age I know that I should be cooking, but it’s so intimidating. I’m always inspired by your videos, and I hope that when I run out of excuses, I can start cooking just as healthy meals as well. ❤
Your videos have really been hitting lately. Idk if you’re putting in more effort, you’re more inspired, or if you’re just better aligned. But you look great and I hope you keep inspiring the inspired ❤
Beautiful vlog! Question… do your family eat the same as you when you are on your gut friendly cleanse? That’s my concern I have to make separate meals.
You might just have to get used to it or forgo it. Tofu tastes like tofu but you can jazz it up with good seasonings. To your own tastes, it’s trial and error. Salt/braggs liquid aminos is going to make a big difference. I recommend trying a tofu scramble with med/reg tofu? Look up a black recipe, seasonings on 1000 and a good quality oil/ghee will make all the difference. It’s cheap enough to experiment! If it’s the texture you hate, then grating it as she did could help. Also you can freeze it then defrost it and cook, which changes texture. And finally if you just want the plant based protein from tofu you can blend/puree soft tofu or buy the shelf stable soft tofu which makes great soups, smoothies, desserts like chocolate or avocado mousse, or as a filler and thickener. Good luck!

I make the same smoothie but with hemps seeds and maca root. Wymans has a tropical berry & coconut mix that I am addicted too.
