The view from your first hotel room was so nice. And yeah, many people don't realize it's cold in northern Vietnam in winter. Best time to visit would be when the rice has grown in (I think around April or May) and then in the fall when the rice fields are golden (September or October).
You guys should hit up Pizza 4P located in the big cities. It's started by a Japanese guy in Vietnam and many people say it's amazing. I'd also recommend doing food tours in all the cities you visit as many Westerners whom aren't familiar with Vietnamese food from what to order, how to eat it, etc., greatly benefit from the guided tours (they also give cultural/history lessons). They should have great French style bakeries in Hanoi and such if you're craving stuff that's not made from rice. :)
We actually did go to Pizza 4P and it really was amazing. We had some friends show us around and help us order all the local foods, which was super helpful.
I believe it was 800k VND ($34.07 USD) for a private hire. You could probably get it for cheaper, we just ordered it through the hotel we were staying at.

Ya, we lucked out with some beautiful weather, but ya definitely want to go back when the rice fields are in full bloom!
