Afghan Lamb Kebab ( shish kebab , Tikka Kebab , Sikh Kebab )

  • Afghan kabab should preferably be grilled on charcoal, so you get the lovely charcoal flavor into the meat. It was raining when I was going to bbq so I had to grill it on the gas grill as you can see in the video.
    Ingredients:
    5 Crushed garlic cloves
    3 tbsp Yogurt
    2,5 tsp Salt
    1 tsp Ginger powder
    1 tsp Coriander powder
    1 tsp Cumin powder
    1 tsp Chili flakes
    1/2 tsp Cinnamon powder
    2,2 lbs (1kg) Leg of lamb
    3 tbsp Olive oil
    Juice of one lemon
    One onion cut in four pieces
    One lemon cut in half
    Chopped parsley for garnish
    Marinade time: 4 - 48 Hours
    Cooking time: 20 min

    Authentic Afghan kabab is just Onion water, Garlic, Salt and Pepper. Try these simple ingredients and you be surprised. Fyi, instead of Garlic cloves, use garlic powder for it to stick to the meat - onions you cut in half and squeeze to get the water out. You can add Paprika spice for its colour.

      Won’t be as tender thou as you are not using the acid from the lemon nore the tenderising properties of yoghurt.

    Came out bloody good. Used lamb chops instead and the oven grill. Will try the tikka next.

    Respect to all nations way of making Tikka kabob, but sincerely saying Authentic Afghanistan’s Tikka Kebob is just amazing taste wise.

    Do u put tenderiser in the meat for tenderising ??? Suggest plz

      In this recipe I used yogurt to tenderis.
      Ther are many ingredients you can use as tenderizer It depends on your choice of meat and recipe.
      The most used tenderizer is: lemon, kiwi, yogurt, unripe papaya, vinegar...

      @safwan ahmad if you want it super tender add unripe papaya, make the unripe papaya to a paste before you adding it to the lamb.

      The bbq on this video is broil king baron 590.
      The charcoal bbq I uses, is a landmann barrel.

      Oven is a good alternative to bbq but it can't never replace bbq.

    Mr Skewer, i tried your recipe, left the marinated meat in the fridge overnight - then grilled but it was so hard. Would you know why?

      How was the meat quality?
      maybe the meat was over cooked?

    Afghans only use salt , black pepper and red pepper. Red Meat has its flavour and you don’t want to mess with it
