Must feel good knowing that you are finally able to put parts to use that you have hoarded over the years, than you can further validate with the point that they can now generate some revenue for you. Most people hoarding parts with the intent of progressing to the "creative outlet," but just get stuck at the hoarding phase. EDIT: I agree with your decision to go gray.
I am just in the planning stage of my own Hoth Diorama, my first MOC since coming back to the hobby. I have been looking forward to this series since you started mentioning in in earlier videos. All the best for the build lets see good things ahead!

I just want to say, "Starting MOCs is my specialty" made me laugh out loud last night when I saw this vid post. I have been looking forward to watching this all night. 🤣
You could pull the tables apart a couple of inches so that there is a gap in the middle. The baseplates can bridge the gaps and still be structurally sound and no more overhang on the sides.
Some thoughts before you start building it. I think it would be a great idea to have the different baseplates be modular right from the start because it’s so much easier to move as you can see e.g. in coconut brick studios coruscant. And as well I would get some different tips from experienced moc builders (I think you’re connected with aaron, David and jhae right) because I’m sure they will have great tips to save a lot of time and pain Happy building!

Suggestion: for later down the line, the 4+ snowspeeder could make for a good, cheap way to get multiple speeders to fill up space in the base/add detail to the battle (though I assume you'll want to use a more accurate version for any major set-pieces) they can be used as half-buried, crashed speeders in the snow or as speeders being stored in the echo base hangar.
If you want white base plates you can do it where they overhang a little and move the tables apart slightly because it wouldn’t matter if there is a baseplate of the crack. Just an Idea though
