Vietnamese BBQ Pork Sausages - Nem Nuong Recipe

- BBQ season is finally here and I'll be showing you how to make scrumptious Vietnamese BBQ pork sausages!
📍Ingredients:
For the Pork Sausage
- 1/2 lbs ground pork (regular)
- 1/2 shallot (roughly chopped)
- 2 slices of pork side / pork belly (0.15 kg)
- 2 Tbsp fish sauce
- 1 Tbsp sugar
- 1 tsp garlic powder
- 1 tsp chicken bouillon
- 1/2 tsp baking powder
- 1 Tbsp cornstarch
- 1 Tbsp neutral oil
- 1 Tbsp annato seed oil for colour (optional)
Pickled Carrots & Daikon
- 1-2 carrots
- 1 white raddish / daikon
For the brine:
- 1 Cup warm water
- 1 Cup sugar
- 1 Cup distilled vinegar
- 2 tsp salt
Dipping Fish Sauce (Nuoc Cham)
- 1 Cup hot water
- 1/2 Cup sugar
- 1/2 Cup lime juice or vinegar
- 1/4 Cup fish sauce
- 2 cloves garlic (minced)
- 1-2 Thai chili peppers (minced)
For the Mango Peanut Sauce
- 1 sliced mango
- 1 inch knob of ginger
- 1 Cup cilantro
- 2 Tbsp peanut butter
- 1 tsp sambal chili sauce
- 1 tsp honey
- 1/2 lime juice (1 - 1.5 Tbsp)
- 1 tsp fish sauce
Assemble Vermicelli Bowl with Sausage (Bun Nem Nuong)
- vermicelli noodles
- lettuce
- pickled carrots & daikon
- cucumber
- mint leaves
- crushed peanuts
Assemble Sausage Fresh Rolls (Nem Nuong Cuon)
- rice paper
- vermicelli noodles
- pickled carrots and daikon
- lettuce
- mint leaves
- cucumber
- fried shallots
