  • This is the famous french cookie: The Macaron. Featured in this weeks episode of Anti-Chef, Macarons are difficult to make, but if you master it, I bow to you. Crumbly on the outside, chewy on the inside, I grabbed the recipe from the Food Network website. However, this is NOT a macaroon, this is a macaron. So call it that! oops...I'm rambling.
    Anti-Chef Episode 16: French Macarons

Anti-Chef is a new type of cooking show. Clueless in the kitchen. Minimal interest in cooking. I'm forcing myself to learn gourmet recipes.

I'm one of those people who leave kitchens when other people are baking because watching them hurts me, 'cause I can bake. I wouldn't walk out of the kitchen if you were baking. I would laugh, but I wouldn't leave and that means something.

Hahaha! You’d be allowed to watch, i guarantee a minimum of 2 meltdowns by me per baking recipe. I’m still cleaning blue food colouring off the walls from these macarons!

This was awesome!! Not only have you come so far but your fails and missteps and honesty are definitely highly entertaining and really distinguish your content from every other boring cooking youtuber. Any professional chef can be flawless. But I don't watch your content to see that. These early videos are diamonds in the rough!

At least you tried, man. I've heard they are really challenging to make well, so I've never even ventured in. Hats off to you for giving it a go!

Next time draw a circle on the parchment paper of the 1 1/2 circle required, then fill the interior with the mixture.

One of the secrets I have found is that you have to make the tip a lot smaller so that you have more control, and then hold the bag at one point close to the parchment paper and dispense so that it flows outward from the tip, lifting up at the last moment with a flourish. You have to find a recipe that works for you, there are a lot of little techniques that go a long way for assuring success.

those are some good tips. I want to try and redeem myself with these. I’ll circle back to this when I do!

Macarons are indeed very hard to make. When you make them you should have at the base of the cookie what is called a foot.
Not sure if you attempted to make these again, but each attempt will make you a better baker. I know my first attempts were terrible too. you should practice your piping skills using practice buttercream. You can search Google for a recipe. Try and use different chips to improve your piping skills, such as a plane, tip, small and large size, a star chip, small, and large size again.
If you were ever stuck without any piping bag available, you can always use parchment paper. cut the parchment paper in a triangle shape and face the point of the triangle away from you then fold up one corner to form a tube with a pointed end then fold the top of the parchment paper down inside the cone so it won’t unfold.
Try doing a Google search for this. It also takes practice two to make a parchment con. Good luck. 8:49

It's not a misconception at all, interestingly. They are etymologicaly the same word, and culinaraly the same food. A macaron is a French macaroon. And yes, they are connected to macaroni! Food and language are so cool and interesting!

Just don't mix the batter so much next time (if there is a next time ;) ). Stick with one colour and add it when you begin mixing because you will always end up overmixing when you mix colour into an already mixed batter. By the way, where was that box of macarons from, and were they any good?

    • @antichef
      @antichef  6 лет назад +2

There is FOR SURE going to be a next time. I’m going to make another episode with the macarons. I want to master it! These tips are great, I’m going to use these when I try again! Thanks!
The macarons were actually from the supermarket: “LONGOS”. I went in there expecting to pick up some standard macarons for the video, they ended up being delicious. Very soft to bite into. So good I went back for more once they were finished. Who’d of known!?

Overmixing when incorporating the beaten egg whites into the almond flour made the batter too loose. You have to work quickly and gently. That way, when you fill the pastry bag it will not goop out the piping end. Too much food coloring. Should have run to the store for cream of tartar. Good try, though. These aren't always easy to make the first time.
