See, this is a kind of cooking I like. I do my ribs Sous Vide, grill em over wood fire and glaze them over the same fire just a little less heat and they come out amazing and with just the right amount of smoke. They take less than an hour active commitment and give me time to focus on drinking beer with my buds. I used to stress out about something not being traditional but nowadays I just leave that kind of stress to the pros

For anyone that doesn't have a pressure cooker, I highly recommend one! I'm not a chef, but I have a passion for cooking, and they're absolutely fantastic for making broth that is so dope it's like jelly when it's cold in the fridge. You can use it for soup, risotto, sauces, curries, etc... Take like 3 chicken carcasses after you roasted yo'self some chicken (keep the bones in a ziplock in the freezer) and throw them in the pressure cooker with water up 2/3rds of the way, bay leaves, peppercorns, celery onion and carrot, and lock that shit down for an hour or and hour and a half. Strain it and boom you're done. It takes 8 fucking hours on the stove to match what the pressure cooker can do in like 1 hour. Using a pressure cooker to make broth or beautiful tender meat out of tough cuts of meat is how I tell people's gas to go fuck themselves.
