    My grandma passed away during the new year. This was one of the first Vietnamese dishes she ever made me. I’ve searched for a recipe exact to hers. This has made my day. Thank u Helen.

    There hasn’t been a single recipe that I’ve made from Helen that wasn’t amazing and this Thit Kho recipe is no exception. Don’t be afraid at the beginning when there’s a lot of broth, IT WILL REDUCE and turn into a beautiful, dark caramelized sauce after a few hours. SO DELICIOUS!

    Thank you for posting this Helen! I’m first generation in America, and being a mom I want my daughter to eat more Vietnamese food like I did growing up. Your recipe is so much easier to follow then my moms.

    Thank you Helen, you are one of the most reliable cooking youtuber in my mind.
    Failed my Viet Stew Pork many times before I found you recipes. Already cook it many times and it’s HIGHLT RECOMMENDED!!!!
    This recipe remove the “horrible pork flavor” and the gravy is so fatty yet delicious. Very smooth and aromatic. Simple ingredients creates complex taste.
    The coconut water is really the magic ingredient, it’s not the same with sugared water. Must try if possible.
    Also, to me, make caramel in oil is easier than in water. Water doesn’t seem to have the heat to brown the sugar before it vapour and leave Stan to the pot. Fried caramel is fantastic!!!
    Used to cook in a stainless steel pot, but I think CLAY POT is way better. Clay pot is thick with a heavy lid, keep the heat stable so soften the meat and season the pork chunk better.

    Hi, I am cooking this dish at the moment. After my Vietnamese friend told me how cook this dish, I bought all the ingredients. On top of that, it sent me this video clip.

    this, in my opinion is probably the most beautiful dish ive ever laid my eyes on. growing up with it, I definitely took this dish for granted but now as an adult, its the perfect food! Rice, with the most delicious carmelized pork and egg. Chefs kiss* thank you for making this video Helen! you bring me back to my childhood in ways i cannot explain!

    I made this dish last night for my husband and myself, we both loved this dish!!! He said he enjoyed the eggs more than the pork which surprised me because he is a big meat eater!! Very beautiful flavour!

    I've been following your recipe channel for awhile now and everything I've made has turned out amazing. Thanks to you! I recently made Hu Tieu Chay for my son and daughter who are both vegetarians and it was a hit. I'm now in search of the vegetarian version for the pork and eggs. I once ate it and it was quite good but never thought to get the recipe from that person. I'm hoping you have it as I can't find it anywhere online.

    I cooked the boiled eggs for 2 hours as told in the video. If you boil the eggs right (8-10 mins depending on the size), cool them down completely and peel, then the eggs will not have the green edges even when you cook them 2 more hours together with the pork.

    I made this and it was delicious! I'm Filipina and my husband is American so I usually cook Filipino and American food but when I want to change it up a bit I usually look at your recipes since i usually have the ingredients in my pantry.     Thanks HelenI put the hard boil eggs in the pressure cooker with all the ingredients then started cooking it. It came out pretty good for my first time. The egg soaked up the caramel color and didn't break in the pressured cooker.

    Yum yummy Thit Kho Tau and Canh Chua Ca Loc are number one dishes of all Vietnamese. Thit Kho Tau an hoai khong chan. Cang an cang ngon. Thanks Helen!

    Thank you Helen. Now I can treat my Vietnamese wife sometimes by cooking her the yummy food that she cooks for me. The first thing that I cooked was the Crispy Pork and she loved it.

    I also use squid brand. Could it be that you marinaded the pork with too much salt/ seasoning powder? Because I think 1/2 cup (120ml) fish sauce should not be salty for that big pot of 1kg pork and 5 eggs. Anyway, taste is a sensitive thing, if you think it is too salty, use less fish sauce next time. For your request, I guess it is Cà tím bung. It is a dish from North Vietnam which I am not quite familiar cooking, I tasted it a few times though. Maybe wil try someday :)

    Thank you sooo much Helen! This was my first time making thit kho and even though I burnt the sugar the first time, the rest of the instructions were perfect and it turned out sooo savory and sweet. I am going to make it for my mom one day :D

    What kind of cooking oil do you use when you caramalise the sugar @ 1.46?
    Will sunflower oil do, or do you need a higher smoke point oil?

    I never knew the name of this and am so happy to be able to have it again. Although I would 100% recommend adding ginger. Just add some big chunks of ginger with the eggs. Wonderful.

      Ginger isn't traditional in this. I'm sure it's good just not what the dish is.

      Yes you can! It just change a little bit in color and taste of food, and it is still delicious.

    uh nếu dùng nước dừa thì ko thắng nước màu cũng được. Chị làm vậy để phòng trường hợp bạn nào ko cho nước dừa mà chỉ cho nước lạnh thì thịt vẫn có màu đẹp^^ Thêm chút nước màu thì màu càng đẹp hơn ko sao :D
    Trứng thì ko cứng đâu, chị hâm lại sau 1 tuần vẫn ok mà. Có người còn chiên trứng đã luộc cho vàng và dai hơn nữa

    my mom makes this for me but not that often because she is often busy
    its delicious and won't spoil even if placed outside for twelve days (when covered with banana leaves of course). this dish is often made on special occasions or when the markets are closed in vietnam.

    I just made this and it turned out great however i think the 1/2 cup of fish sauce is a bit much.. i suggest doing 1/4 cup first and then adding more if needed. Thanks for the recipe helen!
