I am from Cuba and here I have a Power Queen 12V 100Ah Mini. It has been with me for a year without any problems. I use it for 2 lamps, the internet router, a laptop with an external monitor. I am very satisfied.
I have 200ah LiFeP04 in mine - and you are right - GAME CHANGER. I also have a zamp 190h portable solar to keep it topped up, and on the longer trips I bring along my small generator in case of rain/clouds keeping me from charging.
I've got that same battery. I run the 12 volt fridge off a Noco GC018 12 Volt plug, it'll run it for days that way. Then just turn on your inverter only when you're using it. It's a game changer if you don't get much sun for the solar panels. As far as the charge controller get a Victron MPPT with Bluetooth, they've come way down in price. Well worth it.
Maybe the next trip you can see how long you can run your battery before it dies or how much you used on a typical trip to see how long it will last. That's a great choice and you should have no problems for a long time with it.
Great question! We've seen it done before and it's a great option which also gives you portable power and the ability to pull it out to charge. I think for us we like that the battery is always "on". No need to power on unless they have an option for that now!?

Nice setup! Yeah the extra storage comes in clutch in the pnw where trees and clouds can hide the sun 👍🏻
