A common mistake. But nowhere in either the Poetic- or Prose Edda or any other historical source has it been stated Loki's mother Laufey was a Jötunn. The jötunn in his family was Fárbauti, his father.
Loki using his mothers name (Laufeyson) may suggest she was of higher status than his jötunn father. Perhaps even Aesir.
