Mate well done my mum lived at davo and she would take me out and have the same rig but different bait . She used to put them in foil with salt pepper butter and lemon and on the bbq they were beautiful .

Leatherjacket=chicken of the sea. I was fishing at Wilson's promontory off the rocks. 1 hook paternoster rig. I hooked a parrot fish in the mouth and the line wrapped around spike of leather jacket. Dragged up the rocks! Two fish on one hook! 100%
I remember my young son catching his first jacket at Brisbane Waters. I didn’t know what it was but thought it was so ugly it mustn’t be any good so I unhooked it and threw it back. My step father told me it was a jacket and we should have kept it. Damn!
The bite is suttle they inhale and spit it out till it's only a hook left. Got to try time the strike for the inhale takes a bit of feel, we used to use handlines for best results. I use the Panosca because the bottom is very snaggy
