Smoked Bacon Wrapped Scallops in a Pit Boss Smoker

- If you've never smoked scallops before, you definitely need to try these smoked bacon wrapped scallops. I smoked these scallops at 200 degrees Fahrenheit for one hour using my Pit Boss vertical pellet smoker but any smoker will do.
The recipe is simple and all you will need is:
1 pound of scallops (there were 18 scallops in my bag, yours may differ)
1 pound of thin sliced bacon
1/4 cup olive oil
1 Tablespoon of your favorite BBQ rub plus a little extra to dust the bacon with.
Clean the scallops in cold water and pat dry with a paper towel. Pour the olive oil, BBQ rub, and scallops in a zip lock bag and mix around making sure to coat the scallops with the oil and rub.
Put the scallops in the refrigerator for one hour while you get your smoker ready.
Lay out the bacon and lightly dust it with bbq rub and turn over.
Place the scallop on the bacon and roll it over and overlap the bacon by about a 1/4 inch. Cut the bacon and place a toothpick through the center so that it holds it all together.
Put the bacon wrapped scallops into the pre-heated smoker for one hour or until the scallops reach an internal temperature of 145 degrees Fahrenheit.

You do a fantastic job of explaining the how's and why's on every cook, as well as showing each step. I bought the Pit Boss Vertical smoker about a month ago, and started following your prep and cooking instructions. It's as good as advertised. I especially loved the chuck roast results. After a half dozen or so cooks on it, including Boston butt, chuck roast, chicken wings, whole turkey, ribs, etc....I have a question....do you have a good place to discard the water/grease drippings from the water pan?
John, thank you very much! I really enjoy making the videos so I’m glad you find them helpful. Disposing the water is a pain for me... I don’t like to dump it in the yard because I don’t want to attract the critters... I also don’t want to take it inside and dump it down my kitchen sink. What I do instead is turn the heat up to about 350 after I’m done smoking the food and let the water evaporate. The next day I’ll come out with a paint scraper and scrape out any grease that is left over.

Hey Bud. I use all kinds of stuff for a spritz. Experiment around with it but you can even use water. The main thing is to rehydrate the rub so it keeps pulling in smoke instead of turning into a “shell” that deflects the smoke
What type of pellets are you smoking with for that
I believe I used the cherry pellets but and fruitwood blend would be awesome.
