    Sweet oranges are one of the representative fruits of the Italian winter season. They are available from October until the latest in May. During this season, sweet oranges have thick and fragrant peels, making them particularly suitable for making candied orange peels.
    Candied orange peels are used in many Italian desserts. Take Sicily as an example, where locals use various methods to incorporate oranges into their sweets and dishes. Candied orange peels play a crucial role in many Sicilian desserts. Can you imagine cassata or cannolo without candied orange peels? Even Italian Christmas cake panettone, Neapolitan wheat pie pastiera, and sfogliatelle pastries all use candied orange peels!
    Making candied orange peels is not difficult, and there's no need to remove the white pith. The finished product can be stored for a whole year and can be enjoyed on its own, added to desserts, or given as a gift.

    [For Blanching]
    Organic, pesticide-free Italian sweet oranges - 6 (500g of orange peels)
    Water - an abundant amount
    [For Candying]
    Sweet orange peels - 500g
    Water - 400ml
    Granulated sugar - 1kg+100g+100g+100g

    不好意思,想請問一下,前面甜橙皮煮去苦水的部分,重複操作的時候需要更換用來煮甜橙皮的水嗎?還是說可以同樣一鍋水重複利用呢?
    然後是最後要起鍋放涼前最後小火加熱10分鐘的部分,如果這過程中鍋子不小心煮開或煮滾了會影響到成品嗎?因為是用鑄鐵鍋來弄,會擔心說小火加熱也會不小心煮滾。
    不好意思再麻煩解答了❤

      每次都要換新冷水再次滾煮。如果頭幾天煮開了,皮可能會過於軟爛。如果在後期,糖水飽和時煮開了,果皮會柴,口感帶渣。
      所以建議不要離開廚房,隨時觀察狀態。

      通常冬季的橙子皮會厚一些,我一般也都是年初做糖漬橙皮。五月的橙子真的差一點。

      是的,密封容器保存,放室溫環境即可。如果長時間不用,可放冷凍室。

      我沒試過葡萄柚,印象中皮也是偏薄。或許也不合適。
