Unlikely scenarios happen every day. Being prepared is essential. Great video.

Suggestions: beanie hat, face buff, sunglasses. These items can help if you need to go stealth. All lightweight / small

I totally agree with taking out things like the folding saw, and having a pair of bolt cutters is very helpful.
I would suggest adding duct tape, toe warmers during winter, bear/pepper spray or something similar for self defense.

Agree with the comments on adding things like gorilla tape, pepper spray (good for people and stray dogs), beanie, buff (though a shemaugh would be better), sunglasses, and warming things (depends on season). I like how you’ve thought things out (fences along my route so bolt cutters, etc). Basically determine the purpose, environment, and season (along with your skills and realistic scenarios you may encounter) and go from there. Would also add paracord, a hat, aluminum foil, mini crowbar, poncho/tarp combo, bug spray, and cash (mainly small bills). For your med kit, drop size and weight by using cheap plastic pill pouches and add a bit of trauma gear (at least a tourniquet). I’d also lose the safety vest as there are smaller/lighter options to do the same thing. Remember you plan to carry this pack for miles. Every bit of weight matters.
